Happy Sunday! It's been a what since I've posted here. Hope each of you are having a great start to a new week filled with opportunities and possibilities. I am continuing to get several inquiries about hairdressing training - thank you! I am humbled that you enjoy my work and would consider training with me. If you've been here for a while, you know my story of having to put my hairdressing "fun" on a hiatus for some time now due to medical issues. ... Covid has definitely redefine how hairdressers work and most clients are now preferring to go to to a smaller or even private at home salon. While I can easily go back to working with clients - my drive is to help others succeed. You can appreciate also that one does not unlearn their skills, so for those inquiring minds - I'd love to offer a complimentary - yes FREE 1-2 hours of my time to help you out. As we sit at home, some trying to get work done, some parenting, some staying busy baking or housecleaning.... whatever you're doing through this period of phys...ical distancing from your family, friends and colleagues you can't deny that life is moving on one day at a time. The beautiful thing is that families are connecting more, going back to the basics of board games, watching movies at home and enjoying home cooked meals together. In less thank 2 weeks it will be Easter Weekend. I don't know if a big family gathering will be possible with so much uncertainty around us right now, what I do know is that every moment of life counts. I am taking simple pleasures in making fun food. Here's a recipe I pulled together using everyday ingredients as I recognize that you will not be able to get out to buy specific ingredients. It does not require butter or milk. If you make this let me know, enjoy! Citrus Orange Cake Ingredients: 1 cup wholewheat flour 1 cup regular white flour 2 tsp baking powder 1/8 tsp nutmeg - grated Grated rind of 1 lemon Grated rind of 1 orange 1/2 tsp salt 1/4 cup sugar (I used brown cane sugar) cup orange/lemon citrus bits (completely optional, not necessary) 1/4 cup yogurt (I used greek style) 2 eggs 1 tsp vanilla cup orange juice Glaze Grated rind of 1 orange 2 tbsp sugar (I used brown cane sugar) cup orange juice Instructions for Loaf: Preheat oven to 350 degrees F Prepare 1 loaf pan (non stick spray or line with parchment paper) Separate the egg yolks from the egg whites into 2 bowls (1 for yolks, 1 for whites) Using a hand beater, beat the egg yolks and sugar together until smooth and the sugar is well blended. Beat the egg whites until stiff peaks are formed. Combine the egg yolk/sugar mixture to the egg whites. Using a spatula mix together. In another bowl mix all dry ingredients together (whole wheat flour, regular flour, baking powder, salt, grated lemon rind, grated orange rind, nutmeg, salt) Slowing add the dry mixture, to the eggs, alternating with the orange juice. Pour into the prepared pan and bake for 40 mins. Instructions for Glaze Add the sugar, orange juice and grated orange rind in a small pot. Boil until it thickens into a syrup. When you remove the loaf from the oven, pour the glaze over it while it is still hot. You should hear it sizzling. YUM! Enjoy. Take pictures, post and tag me.

These days its all about boosting and keeping the immune strong. Sleep/wake routines are super important - but so is clean foods. It doesn't have to be complicated or extravagant- simple everyday items. I've noticed baking has become the hobby of choice - nothing wrong with that but remember to balance it with wholesome meals. Sharing a few things from our last week and yes I am using Christmas Dishes! Christmas is a time when everyone is generous and kind and forgiving ...- do the things that brings you joy! This phase will pass and we will hopefully become better, stronger, more resilient and peaceful. We can and will do this!
