I made a new recipe today. And I effing nailed it! I’ll share my badass with all you wonderful followers . I call this creation: spaghetti squash casserole. ... Spaghetti squash on the bottom Cooked chicken Broccoli Shredded cheese Poured homemade Alfredo sauce over top Baked uncovered at 375F for 35 minutes Topped with more cheese and rested it. NEW WAY TO COOK SPAGHETTI SQUASH! Put your squash in the over whole, as is, no prep. Bake at 350F for 40 minutes and then shut off the over and let it cool slowly. Once cooled, clear out seeds and fork noodles. Way better texture this way!! HOMEMADE ALFREDO Butter Minced garlic and parsley Add to skillet until bubbling Add heavy whipping cream Once bubbling, reduce heat and add Parmesan cheese. Stir until totally combined. Salt and pepper to taste. Try it and tell me what you think!

Do you journal? What kind of things do you talk about? For almost a year I’ve been blessing and releasing some childhood trauma. And like anything you declutter- it gets worse before it gets better. So I decide to find a safe place to put emotions, patterns and internal stories. I journal the thick of it or shortly after. Change the narrative of the stories you tell yourself. So I grew up with the mindset that if your mother loves you- she bakes you a scratch made cake for your birthday (unless it’s from DQ). And I carried that so hard that I would ACTUALLY THOUGHT parents didn’t love their children with a store bought cake. ... Now before you start playing the shame game. Karma has a fun way to change my perspective. 2 years ago I was doing my scratch made cake for my oldest. She told me her idea of what she wanted- a 3D Pokéball cake. Now bake day comes along and I’m swearing and yelling at this cake. It’s falling apart and I ran out of icing and I can’t get the colors right. And the worse of all? I lose my cool with the freaking birthday girl. And then I started thinking. This cake is for her on her special day and I’m losing my shit so that I can show her that I love her over a home made cake but totally treated her like garbage while making the cake. Talk about a gut check with ultra force. So fast forward to THE YEAR OF THE COVID. And my perspective has changed around birthday cakes. I bought a boxed cake, a tub of chocolate icing and black tube of icing for designs and mini Oreos. No yelling, no meltdowns, cute AF and delicious cupcakes and I still love my kids. Sometimes we carry shit with us that we think is serving us until we realize it doesn’t. And that’s when we need to pivot. Pivot the mindset, let got of the narrative and create a new story that does fit with our current situation. And yeah damn right I had one to celebrate with my one year old

How I’m making it work while working! Prepare, prepare, prepare!! Your meals don’t have to be extravagant but they have to be thought of in advance. ... Pull your protein out in advance. Prep and have things ready the night before so you can throw it together fast when it’s time. This is beef barley soup for tomorrow. I’ll put the barley in the pot and turn it on first thing in the morning so that when I come home supper is ready! I used the beef from tonight’s beef roast. I saved the drippings and used that as my stock. I also had that prepped and ready the night before so that I could turn on my slow cooker before heading out the door in the morning. When we got home we prepped and cooked the sides. This is my version of fast food. The food cooks itself and easy to serve and it costs a fraction of take out!
