. I build my business on providing a consistent product and service whether that is from the same location or between the two locations. Nothing is ever perfect but we’re still working on it. We (humans) are creatures of habit - we sit at the same tables for lunch and same seats in the classroom. When we keep changing the rules on a week to week basis, we’re always in fight or flight mode. That is stressful. I’m stressed, you’re stressed, we are all stresse...d. Business owners have been fighting for the past year. So many of us are throwing up our arms and saying this is hard - hard is an understatement - it’s almost impossible some days. The rules keep changing but the bills and expenses don’t change. We need leaders at all levels who are consistent otherwise we lose trust in our elected leaders. I hope this challenge we are facing as a society inspires all people to address these issues but who knows? Speaking of consistency, I want to thank our regular customers who keep this place going. Even if you order one banh mi a week, it makes a big difference. Our staff know who you are - we recognize your orders when they come in and we remember when we mistake so we can make it up to you next time. It's that time of year where you can't avoid change - the weather is getting cooler and the kiddies are heading back to school. There's a lot of uncertainty in the air and while we are not all facing the same problems, we can empathize the struggles that we all have. This is a little flashback photo of what we started with when we entered into our little space on Hunter Street in January. Through collaboration, determination and elbow grease, we made this space into what it ...is today.
