Have you eaten heart? Often overlooked as a prime cut, heart is a dense muscle with lots of flavour. You just have to be up for the challenge to cook it properly! The trick? Trim all fat and connective tissuewhat remains is tender meat. This recipe is an old Italian dish, passed down for generations and shared by Rob Lancellotti of Swarovski Optik.... Ingredients: 1 deer/antelope heart* 1 medium onion, chopped 2 cloves fresh garlic, chopped cup olive oil 1 litre tomato sauce, pureed tomatoes or diced tomatoes 2 tsp dried basil 2 tsp dried oregano 2 whole bay leaves Salt and pepper to taste *You can use a moose/elk heart but triple the ingredients. Directions: 1. Rinse heart under cold water to wash all blood from both the outside and inside. Remove aorta, arteries and major veins from top of the heart. Trim any exterior fat. Cut heart in half, then slice into 1/2-inch wide strips, removing interior membranes and any connective tissue. Trim anything that looks white or feels tough. Cut strips into 1/2-inch cubes. 2. Using a medium-sized pan with high sides, sauté cubed heart, onion, and garlic in olive oil over medium-high heat for 2-3 minutes. Add tomato sauce (or tomatoes), basil, oregano, and bay leaves. Simmer for 30 minutes. 3. Season to taste. Serve with fresh, crusty Italian bread. Also goes well over pasta if the heart is cubed into 1/2-inch or smaller pieces. You can also use a crock pot, slowly cooking the heart until tender while the tomato gravy thickens. Have you come across this book yet? Local Alberta author Duane Radford’s latest book, Hunting Alberta, is the perfect gift to yourself or someone else during the holidays. Duane shared that he recently got a call out of the blue from a hunter from Leduc who took an exceptional white-tailed buck, only his second big game animal. He wanted to personally thank him for the information in Hunting Alberta regarding their rutting behaviour. He said he finally figured out what he w...as doing wrong and how to hunt whitetails more strategically which led to his success. Other people have said they couldn't put it down! Did you know ruffed grouse have been thought to contain medicinal qualities? Their steady diet of herbs and berries have many old trappers using the ruffy to produce a broth for a special soup that will chase the common cold and flu right out of the human body. Whether that’s true or not, we know one thing: they taste good! So who’s doing some late season grouse-ery shopping? We’re lucky that in many parts of Alberta we can hunt them until Jan 15. It’s usually challenging - but 100% fun.
