Yambamine, Double Anaerobic Red Washed Sidra A nice elegant cup profile, like an elegant version of the Santa Monica CM we had a few weeks ago. It is clean and bright, with just a hint of the fermentation process. Incredibly fragrant from opening the bag to final cup.This is a double anaerobic, "red washed processed coffee. CO2 was placed into containers with fresh harvested cherries for an oxygen-free fermentation for 8 days. After the first phase of anaerobic fermentatio...n, the coffee was pulped and caused the mucilage to turn red due to the pectin component. With this red mucilage attached, the second phase anaerobic fermentation began. The process was maintained at a pH of 3.7 or higher for 4-5 days. This month we are highlighting two coffees as examples where a focus on specialty and microlot coffees can have positive outcomes for producers, and hopefully showcase the benefit of moving away and de-linking coffee from commodity prices. Santa Fe - Washed Caturra A washed processed caturra from producer Nubia Loaiza at Finca Santa Fe in Colombia.... Farm owner Nubia Loaiza has been a coffee producer for several decades, but only recently in specialty coffee. At one point she managed 30,000 trees, which unfortunately fell due to economic circumstances when commodity coffee prices declined. She now manages 10,000 trees dedicated to specialty coffee, and with the microlot premiums she's obtained, she's able to reinvest to replant and double the amount of trees. This natural "citrus" processed Gesha is bursting with mandarin aroma and flavour. The coffee was hand picked and hand sorted, followed by floatation. Originally found as a drought tolerant coffee (it can be left unattended for years and then revert back to great yield production), it has since provided growers with coffees with excellent cup quality. In Kenya, processing typically takes the form of a fully washed coffee, like our Giakanja. Gatugi is the opposite, a natural pr...ocessed SL-28 (uncommon processing practice in Kenya, hence experimental). It has consistently produced high yield, and as recent as 2014/2015, won top spot in the region's high production award. Coffee grown is predominantly SL-28, with some SL-34. How important is grind size and grind consistency? We often follow brew recipes, only finding we can’t get the same extraction, flavour notes, or hitting the ‘brew time’. Most of these recipes were created using top-notch grinders like an EK43 that grinds consistently and evenly.
