Spring starts with A for asparagus, one of the most versatile of vegetables. (Apologies to artichokes.) Asparagus can be served raw, steamed, boiled, sautéed, roasted, stir-fried, deep-fried, puréed for soup or a dip, and baked in custards, tarts and soufflés. This veggie is one of the most nutritionally well-balanced vegetables -- high in folic acid and a good source of potassium, fiber, thiamin, and vitamins A, B6, and C. A 5-ounce serving provides 60% of the RDA for foli...c acid and is low in calories. In frame is Cream of Asparagus which is a vegan soup. Ingredients: 2 shallots chopped 4-5 gloves of garlic roughly chopped 450 gms Asparagus 1 medium potato 3.5 cups of veg broth 2 tsp avocado oil (or any of choice) 1 tbsp lemon juice 1 tsp Fresh Rosemary 1/2 tsp dried theme 1 can of Organic Coconut milk by Rootlive Salt & pepper to taste Instructions: Take a Dutch oven or a soup pot. Put it on stove top over medium heat. Add oil, chopped shallots & garlic Stir them until raw smell of onions n garlic is gone. Add rosemary & theme and stir for about 30 seconds. Follow it with chopped asparagus & potato Stir everything to combine. Add broth and bring it to a boil. Slow the flame to medium low and let it simmer for about 15 mins or until the potatoes are mushy. Turn heat off. Blend this in a high speed blender (I use @vitamix) While blending add rootlive organic coconut milk to it. Transfer back to the pot to just reheat.
