For the Bread: 6 eggs 9 tablespoons melted butter 3/4 cup fresh blueberries 1/2 teaspoon cinnamon 2 tablespoons sour cream 2/3 cup Monkfruit Classic can reduce to make the bread less sweet if desired 1 tsp vanilla 2 tablespoons heavy whipping cream 10 tablespoons coconut flour tsp salt 1 tsp baking powder For the Icing: 2 tablespoons Monkfruit Powdered 1 teaspoon butter melted 1 tbsp heavy whipping cream dash of vanilla 1/4 tsp lemon zest Instructions 1. Preheat oven to 350 degrees and line a regular loaf pan with parchment paper. 2. Melt butter. 3. Beat eggs, Monkfruit Classic, sour cream, heavy whipping cream, vanilla, salt, baking powder, and cinnamon until combined. 4. Add the melted butter to the mixture and beat again until combined. 5. Stir in the coconut flour until thoroughly combined. 6. This part of the instructions has been updated. To keep the blueberries from sinking to the bottom of the pan, spoon a small amount of batter in the loaf pan, then sprinkle a couple of blueberries on top. Continue layering batter then blueberries a couple of times ending with batter on top. This will keep the blueberries spread out and they will not sink to the bottom of the pan. 7. Bake for 65-75 minutes or until knife inserted in center of bread comes out clean. 8. Allow bread to cool for 5 minutes. 9. For the Icing: 10. Combine all ingredients and whisk until smooth. Can add more heavy whipping cream if needed. 11. Drizzle over warm bread. Preheat oven to 350 degrees and grease a 9 X 13 casserole dish. 2. In a skillet, brown sausage until it is halfway done, then add the chopped green bell pepper and chopped onion. Next, drain the excess grease. 3. In a bowl, combine all other ingredients reserving 1/4 cup of the cheese to sprinkle on top. 4. Add the sausage and veggies to the casserole dish, then pour the egg mixture on top and use a spoon to stir a little in the casserole dish to combine all of the ingredients. 5. Sprinkle the reserved cheese on top, then pop the casserole dish in the oven and bake for 20 to 23 minutes. Enjoy! EASY SUGAR-FREE KETO KEY LIME PIE This creamy and tangy Sugar-Free Keto Key Lime Pie is refreshing and easy to make with just a few ingredients. The crunchy pecan low carb crust adds incredible flavor that everyone will love. Ingredients... For the Crust: 1 cup chopped pecans 2 tbsp butter, melted 1 tsp Lakanto Monkfruit Classic For the Pie Filling: 8 oz Philadelphia Cream Cheese, softened 1 1/2 cup heavy whipping cream 10 tbsp Lakanto Monkfruit Powdered 5 tsp key lime zest 3 tbsp key lime juice For the Pie Topping: 1/2 cup heavy whipping cream 2 tbsp Lakanto Monkfruit Powdered Instructions For the Crust: 1. Preheat oven to 350 degrees. Crush pecans finely. 2. Add butter and Monkfruit Classic to crushed pecans and mix thoroughly. I added the ingredients to my mini processor and pulse until all of the ingredients were combined. 3. Grease a pie pan then add crust mixture. 4. Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides. 5. Bake for 10 minutes and allow to cool. For the Filling: 1. In a large bowl, beat the heavy whipping cream until it forms stiff peaks. 2. In a separate bowl, beat on medium speed the cream cheese, Lakanto Monkfruit Powdered, lime juice, and lime zest until the mixture is smooth. *You may need more or less lime juice and zest depending on the ripeness of your limes. Make sure to taste the mixture as you are preparing the recipe. 3. Combine the two bowls and beat with a mixer until everything is combined. 4. Pour filling mixture into pecan crust and set aside. For the Topping: 1. Combine the heavy whipping cream and Lakanto Monkfruit Powdered and beat until stiff peaks form. 2. Spread the homemade whipped cream on top of the key lime layer. 3. Freeze the Keto Key Lime Pie for 1 to 2 hours before serving or until it sets up. (You may store pie in fridge and pop in the freezer for about an hour or two before serving or keep it in the fridge and set out on the counter 30 minutes or so before serving.
