I have a confession to make. I hate fruitcake. (Actually, it’s more of all cake, but fruitcake especially!) All the rum-soaked fruit and coloured maraschino cherries just turns me off. So, the pain au raisin has a story....sort of. I mean, it is a classic pastry, but I have my reasons for having it on the menu - especially since it seems that there is an equal part of raisin haters vs lovers. My mother used to make this boiled raisin cake occasionally for us. It wasn’t a regular item in our household, but it was one that my sister and I (and my mom) relished. I can’t remember if it was a recipe from my mom’s friend Sara-Jane, or whether it was just Sara-...Jane’s favourite thing that my mom made. But we knew when Sara Jane’s birthday came around, the raisin cake would be made. It was more like a loaf than a cake, and part of the procedure was to boil the raisins in water, sugar and butter, then letting it cool before building the cake. As you can imagine, it was rich and sweet, and delicious! I first came across pain au raisin at Beaucoup Bakery in Vancouver. I had my doubts about whether I would like it as much as a pain au chocolat, but one bite set off my nostalgia button like no tomorrow. It had that same sweetness and richness, but with the contrast of crisp, flaky pastry, was a more sophisticated version of what I had enjoyed as a kid. I’ll have the cinnamon bun please! - We hear this at least 7-10 times per week despite the fact that we don’t sell them. I had a flashback the other day - to the first bakery that I worked at, when I was 19. All we made was cinnamon buns - you’ve probably heard of or been to the chain, Cinnabon, that was popular in the 1990’s. This was where I worked. And when you weren’t mixing dough, or rolling buns, you were proofing, baking and frosting these things. It went on al...l day long. By the end of the day, I would have a cooked on patch of cream cheese frosting on the back of my right arm. Every time I opened the oven door it would get a little more crusty, and I wouldn’t know it was there until the end of the shift when I went to put on my jacket to go home. It was gross. However, this was where I learned how to roll a perfect rectangle with a rolling pin, a skill I passed on to my students, later. No, we will not be making cinnamon buns any time soon, but I guarantee the pain au raisin is a worthy contender. So hand pies.....we have another story, this time about the spicy beef one. I used to teach Intro to Pastry at the culinary school I worked at. In the second week the students would learn how to make croissants, the third week they would learn to make danishes, and the fourth week they would learn how to make puff dough. All of these are called laminated doughs, because there is a complicated layering and folding of the dough to achieve the flaky effect that each has. By... the time we got to the fourth week, the students were getting tired of making sweet things (we did much more than just the laminated doughs during the previous weeks) and I took pity on them. So I told them that I would make a savoury filling while they made the puff dough, so that they could better understand the versatility of puff dough - as it can be used in both savoury or sweet applications. So I took a recipe from their own textbook for a South-western empanada filling and altered it slightly to suit my taste. I cooled it down, and the students used it the next day to fill the puff dough in a turnover-style pocket. They all loved the smell of them coming out the oven, and inevitably asked for the recipe after tasting them. It seemed the perfect item to make here, at Hearth & Grain as a quick snack.
