Christmas cookies that are gluten free, egg free & dairy free ?? Yes, and yummmm, are the delicious!! Peanut Butter Chocolate Chip, Black Bean Chocolate Mint and my favourite... Ginger Molasses: 1 Tbsp ground flax & 3 Tbsp warm water 1/4 cup melted coconut oil 2 Tbsp molasses... 1/4 cup coconut, raw or brown sugar 1 tsp vanilla 1 cup almond flour 3 Tbsp coconut flour 2 Tbsp sorghum flour 1/4 tsp pink salt 1/2 tsp cinnamon 1/2 tsp allspice 3/4 tsp ground ginger pinch ground cloves 1/2 tsp baking soda Raw sugar for rolling Preheat oven to 350F. Let flax & water sit at least 5 min. In a medium bowl, beat together coconut oil, sugar, molasses, vanilla & flax egg. In another bowl, combine almond flour, coconut flour, sorghum flour, baking soda, salt & spices. Combine wet & dry ingredients and blend well. Let mixture sit about 10 min. Using a cookie scoop, scoop dough and roll into a ball with your hands, then lightly roll in raw sugar. Place balls on parchment lined baking sheet and using the bottom of a glass press down slightly to flatten. Bake 9-11 min, cool 5 min before removing from baking pan. Enjoy !!
