HEMLOCK IS MOVING TO A NEW LOCATION!!!!! Friends, we are BEYOND excited to announce that Hemlock will be moving to a bigger location this summer! We've got a lot of exciting changes that will be coming with this new location! We can't wait to share more details... but we're keeping the surprises under wraps for now ... Our final day at our current location will be Friday, April 30. The truck will be out and about this summer, and our new location will be open later this summer. Stay tuned for announcements about our open date! Hemlock's new location will be 1217-1221 Lobsinger Line in Waterloo. Now we're gonna go celebrate!

SCIENCE! It's what makes the smash burger so freaking good. The process of "smashing" burgers creates more surface area for the patty to react with the heat, which is where the magic happens: the Maillard reaction. This is when the amino acids and sugars in the meat begin reacting and create that delicious dark crust. More surface area = more crust = more flavour! ... Thank you, Maillard reaction!
