A Kentville Kitchen: The Hill's Grills Collection of Recipes 01.01.2021

Hello friends! I’ve taken a break from social media for a few months but it’s now time to connect and share some of my kitchen exploits with you. I’d love to hear what you’ve been cooking up these past few weeks in isolation! Today’s Easter breakfast was a new one; it’s the first time I haven’t spent Easter brunch with my family so I got creative to distract myself - introducing Strawberry French Toast Bake with warm Vanilla Bean English Custard and Scrabble! And I’m going ...to share my recipes! The French toast bake is a family favourite. You can use 1000 variations of flavouring ingredients to make 1000 different delicious breakfasts. You need: 1/2 loaf of stale(ish) bread 4 eggs 1/2 cup milk 1 cup frozen strawberries 1 tsp vanilla 3 tblsp strawberry jam Grease a baking dish. Chop the bread into 1 pieces. Whisk eggs, milk, strawberry jam, and vanilla in a bowl. Add strawberries and bread pieces. Mix well and pour into baking dish. Sprinkle cinnamon over top. Cover and let sit for an hour or overnight in the fridge. Bake at 350 for 40 mins. Top with whip cream, icing sugar, or custard! Custard: I make this delicious treat all of the time. It’s so easy and tastes way better than store bought pudding. My favourite variation is Eggnog You need: 1 cup whole milk 1 cup whipping cream 1 tsp vanilla or 1 vanilla bean, scraped 4 egg yolks 1/3 cup white sugar 2 tsp cornstarch Bring first three ingredients to boil in a medium saucepan. Whisk egg yolks, sugar, and cornstarch in separate bowl (heat proof). When milk mixture comes to a boil, carefully pour half of it into egg mixture and whisk until well combined. Carefully pour back into the pot with the remaining cream, reduce temperature and whisk constantly until thickened. Remove from heat and immediately pour into clean bowl. Done! It’s a simple breakfast, looks fantastic, and feeds the soul. I’m using my leftover custard for dessert tonight Let me know if you would like more recipes!
