One of the great joys of doing what we do is the privilege of getting to celebrate with everyone. Well it's official - Valentine's Day is cancelled at High Tea Bakery. (These cookies just fit my mood!) .. I received news that one of the parts in our new oven is incorrect, and we are now looking at even longer delays as a replacement is sourced. Certainly not the news I wanted, but we trudge along as best we can. .. Thanks to the kindness of industry friends, we've been able to borrow ovens and honour all pre-existing orders, but we will not be accepting any new orders... until a more concrete date for reopening is confirmed. I'm so sorry for any inconvenience! .. Thank you all for your ongoing support and your kind emails! It's very much appreciated. So this is what all the fuss is about - a rotating ‘mini’ deck oven from Bassanina in Italy. (Still a long way from baking, but we got it in the kitchen!) .. For those unfamiliar, you can roll a 20 pan rack right into this baby, it rotates and turns in its own, and out come evenly baked cookies on all trays! With a standard convection oven, no matter how good it is, you always end up flipping trays to get an even bake, resulting in the inevitable kitchen burns. (Initiation... scars, we call them!) .. New beginnings ... again! .. Renovations genuinely fill me with a sense of dread. (Historically, they don’t like to go my way.) And yet this morning, as equipment was coming off the truck, I allowed myself a little bit of optimism. .. Change is good. For all that 2020 knocked me around, it also made me question the status quo and look for new paths. So even though I made the decision to close for the month of January, it is for a positive reason.... .. My staff are able to go on EI, the renovations can go sideways and I won’t have the stress of big orders breathing down my neck, and when we reopen, we’ll have a beautiful new kitchen ready for all that 2021 has to offer. .. I think I’m ready now 2021. Bring it on! PS: we reopen Feb 2nd.

Hey, Michael Jackson what’s with the glove? .. Those with a keen eye for detail may have noticed my one-handed glove ensemble towards the end of Christmas Cookie Challenge last night. One minute, I’m zesting away furiously on cookie pieces, and the next I’m trying to assemble a 3D lantern with a finger twice as long as it should be. .. Que pasa? you ask.... .. Simply put, I pulled a Belinda! While chopping dates, I naively tried to look back and check on my mixing bowl. (Note to future contestants Food Network does not mess around with knife sharpness!) .. While looking the other way, I cut right through my nail and the top of my finger! It was pretty superficial, if I’m being honest, but anyone who’s cut their finger knows it does not like to stop bleeding. In fact, it outright refused. It took 15-20 minutes to find a medic, get the blood to clot long enough to get me bandaged, and then get me back to my station. .. I may, or may not, have had a momentary mental breakdown, but thankfully egos heal a lot quicker than skin! I gave myself a stern talking to, a quick kick in the ass, and managed to complete the 2nd batch of cookies and assemble my 3D structure before the buzzer. (By the skin of my teeth, but I did it.) .. Now, why they chose to edit it out is a mystery to me. I always assumed reality shows loved the drama, so I was pretty surprised when watching for the first time and my accident disappeared. (As were my fellow contestants. We were all waiting the chop!) .. But at the end of the day, I did this show as a challenge to myself, and boy, did I get a challenge! And I’m so glad I did - I met incredible people, I did something that scares me, and I managed to not cry on national television. All told, that’s not too shabby. .. COVID Update #3,405,173 ... (or so it feels like!) .. Today's announcement does not change High Tea Bakery's status, but we've decided to adjust a few details anyway. .. 1. We will not longer have candles on the shelves. If you call ahead, we'll add them to your order. We'll try to get them on the website this weekend.... .. 2. We're allowed up to 4 customers in our spacing under current regulations, but we've decided to limit it to 2. That allows one person to be served at the counter, with a 2nd waiting. If everyone continues to pre-order, this should keep everyone nice and distanced, but allow room for staff to run up and down the stairs as needed. .. 3. We will continue to bake a limited amount for the front counter, but we stress that this is for last minute additions only. We will not be baking a full assortment, and will instead concentrate on the pre-orders. If you miss the 7 day cutoff online, please feel free to call 204-775-0264 or email us at [email protected]. We'll do our best to fit you in if we can! .. 4. With everyone now calling and emailing ahead, we know it can be hard to get through on the phones and we're not as fast as we usually are on emails. We're so sorry! We're doing our best, I promise! .. We will keep a close eye on December volumes and likely close off pre-orders by this weekend, so get your orders in asap! Once we’ve had a chance to weigh the volumes against the risks of potential employee sick time, staffing restrictions due to COVID, and the current limitations & backorders on packaging, we will reopen sales on a day-by-day basis. ..... MERRY CHRISTMAS WINNIPEG! .. On behalf of the entire team at HTB, I'd like to thank all of you for your overwhelming support this year! We could not have made it through without you! .. More importantly, I'd like to take this opportunity to thank my incredible team. The 25 names on these cookies represent the most cohesive, hard working, and loveable group of people I've ever had the pleasure to work with. And even though I've spent the better part of 2 months alternati...ng between despair, homicidal outbursts, and collapse, they have stuck by me to the end! (And that is no small feat - I'm not sure if that makes them crazy or saintly, but I'm SO grateful they did!) .. While some people can work from home, my team has no option but to work the front lines. They have complied with every new guideline and regulation that has been thrown at us, and spent a month explaining to frustrated customers why we couldn't produce more product.
