How pretty is this beet and apple salad!? Boil your beets and let them cool. Once cooled remove the skin and chop into bit size pieces. Wash, Core and chop a Granny Smith apple into the same size. Roughly chop some mint leaves. Add a splash of apple cider vinegar, olive oil and maple syrup. *not pictured but I added a handful of sunflower seeds in for a rich dose of healthy fats *... Throw it all in a bowl, stir and enjoy

Greek salad skewers Such a great idea for a refreshing appetizer at a BBQ this summer (or just enjoy a tray of them to yourself). I used... halved cherry tomatoes (the colourful ones to make your tray have variety) quartered cucumber slices pitted black olives (my personal favourite) cubed feta fresh basil leaves reduced balsamic vinegar Arrange them on toothpicks or use long skewers! Drizzle with the balsamic vinegar and enjoy
