Smoked and curing fin fish was originally done to allow longer storage before everyone had refrigeration. Now we do these processes to increase flavour, texture and presentation. Shrimp or prawns (there is a difference but it is small) are such a versatile seafood. Much of it being farmed responsibility too. Our spot prawn season in BC is winding down so we are back to sourcing elsewhere. There are still many regions to choose from and a variety of species too. I’m a total classic gal - butter, garlic and a small amount of red chillies along with LOTS of fresh bread. Do you have a favourite spot to each these? Mussels are delicious! It’s so important that they are fresh to begin with, as fresh as possible. Then the different sauces they can be cooked in are endless. I love coconut milk, garlic, lime, Thai basil and chillies. Served up with lots of right out of the oven bread to soak up the sauce or fresh cut, double fried potatoes to dip into that same sauce. Dare I say have both?!
