Shrove Tuesday! Not quite as fun as when we were younger and mom would hide money in our pancakes, but any excuse to have breakfast for dinner works for me! Try these blueberry-oat pancakes! (This recipe is not mine - it was given to me by a colleague years ago) They are SO yummy and filling! 2 cups large flake oats... 1 cup cottage cheese 4 eggs 2 tsp. vanilla Blend all ingredients in a blender or food processor until smooth. Stir in blueberries and cook in a greased frying pan like you would regular pancakes. Top with yogurt and maple syrup! *Note - this makes a lot, so feel free to half the recipe!

I'm back from a great week of sunshine and relaxation with family! Now to stay home and keep my immune system high. Here are a few simple ways you can boost your immunity amid all the craziness: Stay hydrated - aim for at least 3L of water daily (more if you're active!) Probiotics to keep your gut health strong - gut health is directly related to immune system function... Lots of leafy greens, lean protein and healthy fats (nuts, seeds, avocados, etc.) Vitamin D - try the liquid form for best absorption (or get outside!) Get plenty of quality sleep Keep up exercise & move your body daily - walks outside are a great option right now! Manage stress - this can be a stressful time for many people for a number of reasons, but overburdening your body with stress can lead to increased inflammation and decreased immune system function. Hubby gifted me this @clickandgrow garden for Christmas and I am loving it so far! Even I, Mrs. Brownthumb herself haven't killed these plants yet! Currently growing basil and lettuce - this progress is only about 2.5 weeks of growing! Does anyone else have one of these? I'd love to hear what you've grown!

I just spent my Saturday morning reading the new cookbook from @joyoushealth cover to cover and I.am.obsessed! Her other 2 cookbooks have been staples in our house for years, so I have high hopes for this one too - I already can't wait to meal prep tomorrow!
