Also known as BC Snapper, rockfish is an abundant and delicious part of the groundfish fishery in BC and Alaska. Ours is most often caught by beam trawl (the good trawl that doesn’t hit the bottom and has very low bycatch) by small boats operated by a crew of 2-3 fishers. We do see whole rockfish in stores but our customers seem to love skinless boneless filets. These work beautifully in a curry or seared in a pan. It is supposed to hit 17 DEGREES tomorrow Time to fire up the grill and sear some of this gorgeous mackerel we’ve got in stores So easy: 1. Preheat grill to high, close lid and let it burn off any previous cooking debris. 2. Take mackerel out of the fridge, season well with sea salt on both sides, then sprinkle the flesh side with a little sugar too. Let sit 30 minutes.... 3. Scrub your grill. Take half an onion, dip in veg oil and rub along your grill. 4. Turn heat to medium high. Lay mackerel across grill, skin side down. Close lid. 5. Let cook 5 minutes. Brined and almost ready to go in the smoker Hot smoked sturgeon is a beautiful thing . Ours comes from Northern Divine, up in Sechelt B.C. While known for their caviar, @northerndivinecaviar also sells some of the fish that they responsibly and thoughtfully farm for caviar (usually the males). Sturgeon actually needs to age before it’s ready to eat, usually about 5 days. The texture is meaty, mild and perfect for the BBQ or into a screaming hot oven. To smoke it, we brine the fish for a little over an hour, let it dry for a couple of days and then this Thursday, we will smoke it over organic applewood and low heat for 2 hours . Wild Char just in from Cambridge Bay, Nunavut! Its the second season for this most special fishery. The char are headed back to their winter freshwater lake homes from 4-6 weeks of feeding in the Arctic Ocean. This 100% indigenous fishery provides the livelihood for the entire community of Cambridge Bay. Caught using traditional gill nets, packed on ice and transported by sled to float plane to packing plant to jet to us. Whew! Rich, buttery, beautiful. It comes to us from the same small boat, hook and line fishery out of the Philippines as our beautiful ahi tuna so many of you love Its flavour is mild + sweet, its texture is luscious + flaky. Though the returning numbers of wild salmon have been low this season, the fish has been absolutely gorgeous when weve been able to get it. We have this beautiful Coho salmon in from Haida Gwaii, BC. Small boats, usually with 1 or 2 fishers on board will work, fishing different zones as the salmon run. Though less highly prized than Spring or Sockeye, we love the mild buttery taste of fresh Coho. Our ridiculously perfect Quahog or pasta clams come to us from Pictou County Nova Scotia. They are diver harvested by a small second generation family operation. This crazy beautiful fish is back in stores first thing Saturday morning... Wild char spend most of the year in freshwater lakes around Cambridge Bay. The char migrate out to feed in the ocean over the warmer months starting in mid July. The first fishing season is during this migration from fresh water to the NorthWest passage. This is the first fish of the year we are seeing now The second season is at the end of August, when the fish have gorged in the ocean and are mak...ing their way back to their lakes before they freeze over. The fishery is indigenous using traditional weir nets and gill nets to harvest the fish. This fishery is an outstanding example of community, responsibility and true sustainability. The fish are transported by float plane or skidoo to be processed and shipped. Weather plays a major factor here, so fingers crossed that it cooperates long enough for us to get more of this incredible fish over the next 10 days to 2 weeks. THE SOCKEYE HAVE LANDED! . We have many favourite days but landing the first COPPER RIVER SOCKEYE is up there as one of the best!! The Copper River is legendary for prolific runs of sockeye salmon. Its fast-flowing waters run almost 480 km from the Alaskan interior. Sockeye salmon are born in clean glacial lakes and streams upriver and swim to cold Northern Pacific waters to mature. They arrive to make the long and arduous swim back to their spawning grounds primed for the ...journey. Strong and robust, they have built up reserves of fat which makes their flesh rich and luxurious and some of the most sought after fish in the world. We love Copper River Salmon for a handful a reasons. These fish mark the start of wild salmon season and the first signs of summer are usually in tow. The fish themselves are always some of the most beautiful we see all year in part because of the well-managed fishery. Copper River Salmon are treated with utmost respect - short gill nets are set and salmon are extracted by hand and bled cleanly and quickly to ensure flesh is of the highest quality. Their brilliant red flesh has a high fat content which means it stays super moist during cooking and has a pronounced salmon flavour. This fish is meant for the grill . . . We will have fresh fillets on the counter this weekend at all locations for $49/pound. @copperriversalmon
