COLOMBIA // Mandarum - Filter When it comes to challenging the status quo, Mandarum is as experimental as they get. Coffee plants of the Tabi varietal (a new hybrid of Timor, Bourbon and Typica) are remarkably disease resistant, making them ideal for experimentation. These ripe coffee cherries underwent an anaerobic fermentation (meaning fermented without oxygen) with dried with mandarin orange peels, followed by aging in rum barrels at origin for 15 days.... We purchased this incredibly unique coffee not only because it tastes great, but also because it rewards producers who are taking risks with experimentation, and encourages the coffee community to continue pushing the envelope. BOOTSY // Farmhouse IPA (6.75%) Huge thank you to Canadian Brewing Awards for the Silver for one of our original and consistent favourite brews! We opened our house with Bootsy on tap and it's remained one of our core beers. Brewed with oats and raw wheat, Bootsy (6.75%) was fermented warm on a blend of saison yeast and fruit forward Brettanomyces, and generously dry hopped with Mosaic and Simcoe.... Bootsy will be available at our house and liquor stores this Friday. Congrats to all the winners!

DIANA // Brett Saison (6.5%) This is a very special release for us at House of Funk (and specifically the Hollett family). Diana is a beer dedicated to a woman dear to our hearts - our Auntie Diane - who we feel embodied everything that this beer is - wild, elegant and beautiful. Auntie Diane passed away a couple of years ago around the time we were in the construction phase of building our brewery. Being a fan of craft beer and all things awesome in life, we made her a promi...se before she left us that we would brew and name a beer after her - thus Diana Brett Saison was born. This beer is brewed with barley, wheat, rye, buckwheat, spelt and oats; hopped with Loral and fermented directly in barrel with Brettanomyces and a house saison yeast culture. Tomorrow (Sep 11) would have been Diana's birthday, so we thought it a fitting day to see this bottle released. We will be releasing first only at House of Funk, with liquor stores receiving stock next week. If you get a chance to grab one tomorrow from House of Funk, please join us in raising a glass to our Auntie Diane. She would have drank you under the table.

NEW COFFEE // Barrel Aged Peru We're launching our first Milk Espresso: a Peru aged in bourbon barrels for six months. This coffee came from Finca Churupampa, in the mountains of Northern Peru. The Tocto family started this farm in 2011, and through working with other local producers, they have expanded it into a farming initiative which now includes 162 producing members in the surrounding areas.... Their goal in creating this initiative was that quality of life for coffee producers should be just as important as the quality of the coffee. With a focus on producing premium varietals, the group is grounded in mutual trust and environmental care, and regularly come together for workshops to improve on sustainable practices. With an aroma of sweet vanilla bourbon, we think this coffee tastes best with steamed milk for a creamy Irish coffee feel, and even better if you try it as a mocha! SUSTAINABLE SOURCING // Farm Feature - Myrtle Meadows As brewers, it's easy to disconnect from the four ingredients that we use in the brewing process. We want sustainability and local sourcing to be top priorities here at House of Funk, but we found ourselves treating our ingredients as endless commodities. The cheapest and most easily accessible ingredients usually dominate the market. We often turn to imported ingredients from the USA, Europe, New Zealand, and Australia..., when the majority of our ingredients can be grown and sourced locally. At HOF, we believe that forming relationships with the growers that produce our malt, hops, and fruit should be one of our strongest values. On Thursday, we had the chance to tour Myrtle Meadows Farm , a family-owned hop farm deep in the Pemberton Valley. The De Zwaan and Milne families have poured their heart and soul into this property, and their location in the valley produces a unique terroir for their hop production. They're also deeply focused on community and the roots of the surrounding area: "We are committed to creating jobs for local residents, and have been fortunate to access and hire local indigenous residents from the Lilwat Nations band. Currently, 10 members of this community are part of our team." The soil in the flatlands of the Lillooet River provides great drainage capabilities, which allows the hop plant to rely on minimal water - hops need to suffer a bit in order to flower properly produce high yields. The location of the farm within the valley, facing almost directly west, allows the hop plants to receive maximum sunlight - up to 16 hours a day in the peak of summer. The hops at Myrtle Meadows are a true expression of terroir - while they grow some classic varieties such as Cascade, Centennial, and Fuggle - the aromatic properties of these varieties are quite unique. In 2021, HOF is committed to purchasing our Saaz, Centennial and Sorachi Ace directly through Myrtle Meadows - one of many steps to push our brewery in a sustainable, locally influenced direction. PASTICHE / traditional berliner weisse (3.3%) Available three ways: unadulterated, with honey wildberry syrup, or with honey rosemary syrup. Pastiche is a traditional style berliner weisse, brewed with Pilsner malt and raw wheat, and without the boil or any hop additions. Pastiche was then fermented with two strains of Brettanomyces from Escarpment Labs - B. Bruxellenis and B. Anomalus - both of which were cultured from old bottles of traditional German berliner weisse.... In Germany, berliner weisse is typically served one of three ways: unadulterated, with raspberry syrup (himbeersirup), or with Woodruff syrup (waldmeistersirup). RAIJIN // Koji Beer (8.5%) Raijin was brewed in collaboration with our friends Kojifinefoods. We brewed a standard strong golden base with Pilsen malt, wheat malt, flaked rice and spelt, and fermented the wort in stainless with sake yeast and 25kg of wheat koji (made by Koji Fine Foods, from our wheat malt).... The koji provided enzymes that broke down long chain, unfermentable sugars into simple fermentable sugars, which caused the beer to ferment to bone dry - about as dry as we've ever seen a beer ferment to.
