VEGAN SHEPHERD'S PIE A twist on a classic. FILLING: We used a 340g pack of plant-based ground "meat" Beyond Meat, blended an onion and 2 tbsps EVOO and mixed in, and a generous dash of vegan Worcestershire Sauce, one cup of peas, and one cup of sliced par-boiled carrots. Mixed well and brought to a simmer in a pan. ... CREAMY MASHED POTATO: We used 1 kg of potatoes, boiled until soft. Then mixed in half a tub of Humble Seedz, and two tablespoons of EVOO. A little seasoning and a dash of herbs. Spoon filling into a baking dish, and spread the mash on top with a fork. Season with salt, pepper and herbs of your choice, and bake at 400F for about 25 minutes, or until brown and bubbling.
