The colour and flavor of honey varies based on the forage source the bees were on, which is different for each frame of honey. In some countries, honey must have its pollen content tested for labelling purposes. In other countries it is graded by colour [see chapter 53]. Melissopalynology is the study of pollen contained in honey and, in particular, the pollen source. Honey ...foraged from single pollen sources can be more valuable than honey derived from multiple floral sources. To have a mono sourced honey there must be enough captivating and exciting plant forage for the bees to not stray to other nectar sources, and is rare. Our clover honey is never 100% clover as there is too much diversity around us, which we are proud of! It will taste different season to season, beeyard to beeyard.
