Hunter's Maple Products & Pancake House 20.09.2020

While we are very sad not to be able to open for breakfast, the sap has been flowing and we have more than 180 gallons of fresh syrup made and more on the way. If you need to pick up some syrup and maple products, they are available for pickup at the restaurant during our regular hours.

Yes, we are still open Saturdays and Sundays from 8am-3pm. What we are doing to keep our restaurant, and you, safe from COVID-19: 1) Providing a touch-less hand sanitizing dispenser located outside our restroom area, and additional individual use hand sanitizing wipes available at every table and at our front cash.... 2) Providing anti-bacterial soap in our restrooms, and around all food prep areas. 3) Thorough cleaning of all surfaces and trays with food-safe disinfectant cleaner between every use. 4) Self-quarantine of any staff who are feeling unwell. These are all policies we already had in place, so this means very little will change for us and how we do business, but we will continue to adapt our policies and provide updates as the situation develops and as Health Canada dictates.

As the 2020 Syrup season is about to begin we would like to introduce a new edition to our family, a brand new evaporator. We are still sticking with a traditional word fire burn, but our new machine burns cleaner and hotter than our old one, helping us make more of our syrup faster. Getting anxious for the start of the 2020 maple syrup season? So are we! Our first official day will be Saturday February 29. We will be open every Saturday and Sunday in March and April (and February 29) from 8am-3pm. We will also be open on Good Friday.

HOLIDAY ADVENT CALENDAR - DAY 24 For our last recipe we are sharing a long-time family favourite that we always hope to see on our dessert table come Christmas day, maple butter tarts. If you love butter tarts, but have never tried a maple syrup one before, these will change your life! Use with your favourite pie crust recipe. MAPLE SYRUP BUTTER TARTS... Ingredients: 2 eggs (well beaten) 1 1/2 cups brown sugar 1/2 cup Hunter's Maple syrup 2 tsps white vinegar 1 tsp vanilla 1/8 tsp salt 6 tbsps butter (melted) 1 cup raisins (optional but can also be your favourite nut instead) You can create your own pie crust dough, or buy them pre-made unbaked ones, but do not bake before adding the filling. If you choose to use raisins or nuts, put them into the unbaked shells first. Mix together all other ingredients and fill the shells no more than 2/3 full. Bake in a pre-heated oven at 400 degrees for 10 minutes, then reduce to 350 and bake for an additional 5-10 minutes. Watch carefully so that the filling does not bubble, if it starts to bubble, reduce heat. HOLIDAY ADVENT CALENDAR - DAY 23 In our second last recipe we are cheating a little since it doesn't actually have maple syrup in it, however it is a much requested recipe and they act as perfect conduits to get syrup from the bottle into your belly! These sugar-free, grain-free and dairy-free pancakes are always a big hit at our restaurant and at home! HUNTER'S PALEO PANCAKES... Ingredients: 1/2 cup unsweetened apple sauce 1/2 cup unsalted almond butter 2 eggs 1/2 tsp baking soda 1/2 tsp cinnamon Mix together apple sauce, almond butter and eggs until well mixed then add in baking soda and cinnamon. Pour onto your favourite well-oiled griddle or frying pan, and flip after bubbles have stopped forming and underside looks browned. If you're looking for a lower fat versions, you can pour these onto a parchment paper lined baking sheet in 1/4 cup scoops and bake at 350 degrees in the oven for about 10 minutes. These are freezable after baking this way and can be brought out and warmed up whenever you're feeling hungry. HOLIDAY ADVENT CALENDAR - DAY 22 We know you've been waiting for this one! Regardless of the holiday, Thanksgiving, Easter, Christmas, a holiday with a big family meal just isn't a holiday until our famous maple baked beans make an appearance. We know you love them when you visit the Sugar Bush in the spring for breakfast, now he's the recipe if you want to make them at home for yourself. Full disclosure there is a secret twist to one of these ingredients that only family kno...ws ;-) MAPLE BAKED BEANS Ingredients: 3 cups of white navy beans 1 small sized onion, diced 2 tbsps Dry Mustard 2 tbsps Salt 2 cups Hunter's Maple Syrup 1 cup chili sauce Boil the beans until soft and drain. Mix all other ingredients well and set aside. While beans are drained but still hot, add syrup mixture and mix well. Pour into large roasting pan covered with tinfoil and bake for 3.5 hours at 350 degrees. HOLIDAY ADVENT CALENDAR - DAY 21 It's the first day of winter and the first full day of winter break for some families. So as supper time draws near, who wouldn't be daydreaming of a sweet and spicy little pick me up? That's why today's recipe is something to sip on after the kiddos have gone to bed. MAPLE CINNAMON SOUR... Ingredients: 3 tbsps bourbon or whiskey 2 tbsp fresh lemon juice 1 tbsp fresh orange juice 2 tsps Hunter's Maple Syrup pinch of cinnamon cranberries (optional) Combine ingredients in a cocktail shaker with ice and shake until well mixed. Pour into your favourite glass and enjoy responsibly! HOLIDAY ADVENT CALENDAR - DAY 20 Did time get away from you and now you are hurrying to come up with something to share at the holiday cookie swap or treats to take with you on your holiday visits? We've got you covered! These are a twist on the classic rice crispy square, but with mapley goodness. You can add peanuts, or make it more festive by adding in some Christmas sprinkles, cranberries or chocolate chips! MAPLE CRISPY SQUARES... Ingredients: 1 cup Hunter's Maple Syrup 2 tbsps butter 3 cups rice puff cereal 1/2 cup peanuts (optional) Boil your maple syrup until it reaches 235 degrees on a candy thermometer and then remove form heat. Add butter and beat until it begins to thicken. Add cereal and peanuts and mix well. Pack into a buttered 9x9 pan. HOLIDAY ADVENT CALENDAR - DAY 19 Who doesn't like a good muffin for breakfast? We love this muffin recipe which incorporates both our delicious maple syrup and a nice crumble topper. A perfect accompaniment to your afternoon tea as well! GOOD MORNING MAPLE MUFFINS... Ingredients Batter: 2 cups flour 1/2 cup brown sugar 2 tsps baking powder 1/2 tsp salt 3/4 cup whole milk 1/2 cup butter, melted 1/2 cup Hunter's Maple Syrup 1/4 cup sour cream 1 large egg 1/2 tsp vanilla 1/2 cup raisins (optional) Topping: 3 tbsps flour 3 tbsps brown sugar 2 tbsps chopped nuts (optional) 1 tsp cinnamon 2 tbsps cold butter Combine all wet batter ingredients and mix together well. Slowly add in dry ingredients until all have been incorporated and pour into greased muffin tin. You can also use cupcake liners if you prefer. Mix together flour, brown sugar and cinnamon (chopped nuts if you are adding) and cut in butter until it gets crumbly. Sprinkle over top of muffin batter.
