With restaurants shuttering around the world due to the pandemic We @ingredientssk had a unique opportunity to purchase @antica_terra of Eola-amity hills in Oregons Willamette Valley. These wines are normally sold out for years on end. The geology of the Antica Terra vineyard is pretty unusual. Here, the remains of a far older pre-historic seabed rise to the surface, leaving the vines to struggle, without topsoil, atop a fractured mixture of sandstone sown with 40 milli...on-year-old marine fossils. Above ground, the place is just as intense. Its exposed rock, steeply pitched grades and panoramic views of the surrounding land convey a feeling of dramatic scale. The west wind moves constantly through the vines, picking up velocity at night when the marine inversion draws cooler air through the Van Duzer Corridor, causing a diurnal shift of forty to fifty degrees each evening. The tiny clusters of thick-skinned berries are less than half the usual size and fit easily in the palm of the hand. The canopy, which struggles to reach the top catch-wire, is incredibly sensitive. The smallest changes in the environment can cause the leaves to turn yellow and fall. These qualities cause us to worry. They demand that we offer our vines the most exacting attention and care. In return, they offer us the opportunity to make good on the promise we made to ourselves and to this site when we arrived: to gain on intimacy, to perfect and refine our farming over time, paying attention neither to trend nor to dogma. Fruit from high altitude Carignan vines planted in 2001 on decomposed granite is hand harvested, whole bunch fermented in old French oak. Fermentation for this particular wine lasted only 3 days before it was pressed and was not carbonic. TESTALONGA EL BANDITO. I Wish I Was a Ninja STORY I Wish I Was A Ninja Pet Nat is from one of South Africas most interesting and bravest wineries. The winemaker Craig Hawkins has a dedicated winery with plenty of space and a steady supply of excellent grapes from well-farmed vineyards. After years of experimentation, he has developed a style that he is comfortable with, and with that he makes around 40,000 bottles. The I Wish I was a Ninja Pet Nat is from a tiny block c...lose to Lammershoek. This vineyard has become very important for Craig as it provides grapes with consistently low pHs which is crucial for this Cuvee. The Colombard grapes are hand-harvested and fermented in stainless steel at a low temperature. The juice was then racked six times during fermentation to remove the sediment. It was bottled under a crown cap with sugar of 58g/l where it was left to finish fermentation and build up a natural pressure of carbon dioxide. After 10 months the bottles were riddled and disgorged and topped with the same wine (from other decanted bottles) and crown-capped again. No SO2 was added to the wine and neither was any settling or fining agent used. The result is a bristling brilliant pet nat with an acidity of 8.9 and a residual of 23 g/l. It is aromatic and laser-bright, like lemonade for grown-ups. A fresh, bright pet nat with a taste reminiscent of the freshest apples and peaches. Off-dry and far too smashable, its like lemonade for grown-ups and insanely tasty from one of South Africas most exciting winemakers. Pair with: Almost anything!
