I’m SO happy with how my veggie taco meat turned out, and even happier because I wrote down the recipe as I went!! Many of you have asked so here it is : Mushroom + Walnut ‘Taco Meat’ 1cup walnuts, soaked 30 mins 450g white mushrooms 1/2cup sun-dried tomatoes 1 large onion, chopped 2 cloves garlic, minced 2 tbsp EVOO 2 tsp each : smoked paprika, coriander, black pepper, chilli powder ____ Add mushrooms, walnuts & sun-dried tomatoes to food processor Add oil to skillet, sauté onions & garlic Fold in mushroom mixture & add all spices Cook stovetop for 10-15 minutes to remove moisture Spread onto parchment lined baking sheet & back for 30-40 minutes @ 300F. #veguary #eatmoreplants #veganrecipes See more

You know the recipe is pure gold when the kids are smiling with approval! My niece & nephew {plus the rest of the famjam} put the stamp of approval on my Apple Crumble recipe so it’s officially time to post! Base: 7-8 medium sized apples, chopped... 2 tsp cinnamon 1/2 tsp each nutmeg & ginger Mix apples with spices and spread over bottom of baking pan. Topping: 2 cups oats 1/2 cup oat flour 1/4 cup organic flaxseed 1/3 cup organic coconut oil 1/4 cup maple syrup 4 tsp cinnamon 2 tsp vanilla Melt coconut oil & mix all ingredients together, spread even layer over apples.
