As a Guyanese born Indian, I am proud of my heritage and roots. We didn't have much generally speaking both at a family level or even as a country on the whole. But we were very creative and ingenious when it comes to taking whatever we had and make a good meal. Yes I enjoy cooking using all sorts technique and finishing off with some dramatic plating. Nothing wrong with that at all! But I love going to my roots and cooking those homemade dishes that I enjoyed in my chil...dhood year. This is salwart of #guyanesecooking every home does their version of it. Amongst our community it is simply know ln as "#cookup". For as long as I can remember we always use #blackeyepea and sometimes #pigeonpea. The peas are cooked with the rice until tender in a coconut broth. Normally we will saute the chicken with garlic thyme and casreep. (Dark sauce made from the yuca root). The chicken is added to the pot towards half way through and then dice vegetables towards end. Its slowly simmer until both rice and peas are tender. It may look more like a fried rice but I do not like a lot moisture in my cookup. See more
