Greek ribs with rosemary roasted potatoes and Greek salad. If your trying to eat keto or low carb Greek ribs are the way to go. They have so much flavour there is now way you will miss the bbq sauce! Low carb or not though, these ribs are just plain delicious!

Update!!! See below for recipe!!! Greek chicken thighs and potatoes. You marinade them and bake them together! An easy, yet impressive dinner! Let us know if you want the recipe! . . .... Ingredients - 4 pounds bone in skin on chicken thighs - 1 tablespoon salt - 1 tablespoon dried oregano - 1 teaspoon black pepper - 1 teaspoon dried rosemary - 1 pinch cayenne pepper - 1/2 cup fresh lemon juice - 1/2 cup olive oil - 6 cloves garlic minced - 3 medium russet potatoes peeled and quartered - chopped fresh oregano for garnish Directions Place chicken and potatoes in a large bowl and mix together will all the other ingredients except for the fresh oregano. Once all stirred, cover and refrigerate 30 mins - overnight. Preheat oven to 425 F. Lightly oil a large roasting pan. Transfer chicken pieces skin side up , distribute potatoes around chicken. Drizzle with 2/3 cup of chicken broth. Spoon the rest of the marinade over top. Place in oven, toss chicken and potatoes but keep chicken skin side up. Continue cooking until chicken is browned and cooked through. About 25 more minutes. Transfer chicken to platter and keep warm. Set oven to broil, toss the potatoes once more. Place under broiler and broil until potatoes are caramelized (about 3 mins). Transfer potatoes to serving dish with chicken and garnish! See more
