Can you tell that I've already started digging in? This is Caramelized White Chocolate with Cherries! Yes, the name is quite long. But guys. It is DELICIOUS. In fact, it's spectacular. The caramelized white chocolate pairs with the cherries in a way that I do not even have vocabulary to describe!... Only disclaimer: it is slightly intense, and slightly sweeter than other flavours. To make it, I spread white chocolate as well as a bit of extra cacao butter out on in a dish, and heat it in the oven, stirring every now and then - and it turns from white into this gorgeous dark tan colour, while also developing a smoky, caramelized flavour. I learned this technique from David Lebovitz. Then, I added the Caramelized White Chocolate to milk, cream, etc... The process for the cherries, I'll save for another day.
