PAPRIKA While most recipes just call for 'paprika', there are a few different varieties available, and they each give a little different flavour, as well as range in colour and pungency. This variation comes from the different pepper varieties it is ground from. Spanish Paprika (also known as sweet paprika, or ASTA 110) - has a mildly sweet and mildly smokey taste to it, and little to no heat. Used in rubs, marinades, etc. Hungarian Paprika (also known as spicy papri...ka) - has a bit of a kick to it and a more pungent flavour. Excellent in savory dishes and full flavour rubs and sauces. Hickory Smoked Paprika - a beautiful smokey flavour that pairs well with wild meat, cheesy dishes, dips... or honestly anything else you van think of! Standard Visual Colour Paprika - This is your paprika for garnish, very mild flavour. See more

Sausage making FYI WATER - Do you add? How much? When? Why? The answer is YES, add water to your sausage/jerky mixes you are making at home. This allows for easier mixing and stuffing -- if you are requiring to work very hard to stuff, add more water! In addition, it is good practice to add your cure to the water to ensure consistent coverage throughout your meat. GENERAL GUIDELINE: 50-100ml per pound of meat. ... There are a couple exceptions: For jerky, work on the lower end of that water guideline, then add as necessary. For snack sticks, you may want to add even more water to allow ease of stuffing!
