A perfect weekend recipe.. Beer Battered Cod: Amazingly crisp on the outside yet juicy and flaky on the inside! - 1 Cups All Purpose Flour - Cup White Sugar... - 2 Teaspoon Baking Powder - 2 Eggs - 1 Teaspoon Hot Sauce [if desired] - 1 Cup Beer - 2Lbs of Cod Fillets: Cut into Strips - Salt and Pepper for Taste - Vegetable Oil for frying 1. In a medium bowl combine 1 cup flour, sugar, baking powder, salt and pepper. Stir in eggs and hot sauce. 2. Slowly pour in beer. Stir constantly with a whisk until the batter is smooth and no longer foamy. 3. In a large stock pot or cast iron skillet heat 2-3 inches of oil to 370F 4. Dip cod strips into remaining flour. Shake off any excess. 5. Then dip into beer batter. 6. Carefully drop fish one piece at a time into the hot oil. Cook until brown on both sides, turning only once. 7. Drain on paper towels Enjoy!!

Interested in trying something new? How about Pico de Gallo with Halibut Steaks.. Between prep and cook time this recipe will only set you back 25 minutes. Give it a try! For the Pico de Gallo 3 roma tomatoes diced 1 jalapeno diced... 1 garlic clove minced 1/2 cup parsley or cilantro, chopped 1 tablespoon lemon juice or lime juice, freshly squeezed 1/8 teaspoon sea salt For the halibut steak Halibut fillets - 4 1/4 teaspoon sea salt 1/4 teaspoon black pepper 1 1/2 tablespoons olive oil 1 tablespoon lemon juice (about half a lemon) Instructions 1.Combine the ingredients for the Pico de Gallo, and set aside. 2.Heat oil over medium heat until shimmering, careful not to allow it to get to the smoking point. Salt and pepper fish on both sides. 3.Cook fish for 3 to 4 minutes until fish is golden brown on bottom. Flip, and cook for an additional 3-4 minutes or until golden brown and cooked through. Squeeze the lemon/lime juice over the fish. 4.Serve with the Pico de Gallo on top or on the side ENJOY!!

Want an Idea for Pickerel [Walleye]? Ingredients: 4+ Walleye Fillets 2 Eggs, Beaten... Cup All-Purpose Flour Teaspoon Garlic Powder Pinch of Salt Teaspoon Ground Pepper 2 Cups Saltine Crackers-Crushed Vegetable Oil For Frying 1 Lemon in Wedges Steps: 1. Place beaten eggs a bowl and set aside. Combine the flour, garlic powder, salt, and pepper in another bowl. Pour the cracker crumbs into a third bowl. 2. Heat the oil in a deep-fryer or large cast-iron skillet over medium-high heat to 375F (190C). 3. Dip the fillets into the flour mixture, then the eggs, and then the cracker crumbs and set fillets aside on a plate. Test the oil.. [Expect a crackle and pop when a cracker crumb is dropped into it.] 4. Carefully lower 2 fillets into the hot oil. Cook until browned. [About 3 minutes per side] using tongs to turn the fillets. 5. Transfer to a paper towel-lined plate and repeat with remaining fillets. Serve with fresh lemon wedges. ENJOY!

Easy Recipe Idea for Scallops! 1 lb of scallops Fine sea salt Black pepper... 1 tablespoon extra virgin olive oil 2 tablespoons unsalted butter, cut into small pieces 1 clove garlic, grated 1 tablespoon dry white wine 2 tablespoons fresh chives, finely chopped 1. Pat the scallops dry with a paper towel. 2. Season with salt and pepper. 3. In a large skillet set over medium-high heat, add the oil. 4. When the oil is hot, add the scallops and cook until golden brown on one side, about 2 minutes. 5. Gently turn the scallops, add the butter and garlic to the pan. 6. Continue to cook, spooning the butter over the scallops until they are cooked through, about another 2-3 minutes. 7. Add the white wine, cook another 10 seconds. 8. Serve with chives. ~Enjoy!
