Enjoy these Lemony Dill Glazed Carrots with your Thanksgiving meal! 10-12 medium carrots tsp. salt... 1 Tbsp. butter 2 Tbsp. honey 1 Tbsp. frozen orange juice concentrate 1 tsp. Lemony Dill Seasoning Himalayan Pink Salt and 5 Peppercorn Premium Blend Place carrots into a large saucepan, with enough water to reach a depth of 1" and bring to a boil. Reduce heat to low; cover and simmer carrots until tender, 8-10 minutes. Drain and transfer to a bowl. Melt butter in the same saucepan; add honey and orange juice and bring to a light simmer. Transfer carrots into the sauce; cook and stir until carrots are glazed, about 5 more minutes. Season with Lemony Dill Seasoning and salt and pepper. Place in a serving dish and garnish with chopped parsley.

Creamy garlic chicken over pasta that another consultant made.... 4 boneless skinless chicken breasts 1 Tbsp Harvest Fresh Garlic Olive Oil Oh! So Garlic (to season) ... Salt & Pepper (to season) Pour 1 Tbsp Olive oil in hot pan. Season Breasts with Oh! So Garlic, Salt & Pepper. Place each breast in pan to sear about 2-3 min each side. While searing, you can prepare the sauce. (You could do this in the pan if you just want a one-pan meal instead, but cooking time will vary) For the sauce I used 3Tbsp Margarine 3 Tbsp Flour 1 1/2 cup milk (heavy cream would work as well for a thicker sauce but I didn’t have any on hand) 1 Package Creamy Garlic a hot Dip Mix 1 cup shredded parmesan (not the powdery stuff) In crockpot melt 3 Tbsp margarine, then slowly add in 3 Tbsp flour and stir to combine. Slowly (a little at a time) stir in the milk. Continue stirring to ensure It doesn’t clump and burn. Add Creamy Garlic Hot Dip Mix and stir to combine. Slowly add parmesan cheese and stir to melt. Add chicken breast to sauce and cook on high for 4 hours. Remove Chicken breasts from sauce. Can be served as is with rice and steamed vegetables, or baked potato, or as we did over pasta of your choice. If you choose to make the pasta sauce, stir the sauce mix once you remove the chicken. The sauce will most likely be pretty thin as it now has the chicken juices. I added 1 additional Tbsp flour, stirred and continued cooking until it was the desired consistency. Then drained my pasta and added it to the sauce and stirred to coat. Placed the pasta on the dish, cut the chicken into strips and placed on top and topped with a little extra shredded parmesan.

Audrey has been busy in the Sunset Kitchen! She is enjoying soup for lunch and making our Home Office smell amazing! Here is what she said about it... As the days get cooler there is nothing like a great bowl of soup to comfort you. Adding Sunset Gourmet to any of your dishes always takes it up many levels! I wanted to amp up the heat a bit and our Caribbean Mango Tequila Sauce was the perfect addition. Enjoy! Butternut Squash Soup... 8-9 cups Chicken broth 1 large or 2 small Butternut Squash 1 sweet potato 3-4 medium-sized carrots 1 small Red pepper, diced 1 small red onion, diced 1 MacIntosh apple, peeled and diced 1 Tbsp. Fresh Harvest Garlic Olive Oil 1 Tbsp. butter 2 Tbsp. frozen orange juice concentrate 1 tsp cumin 3 Tbsp. Caribbean Mango Tequila Sauce (you can use less if you don’t like the heat) 5 Peppercorn Premium Blend Himalayan Pink Salt cup cream Wash, peel, and cube the squash, sweet potato, and carrot. Boil in chicken stock until fall-apart tender. While veggies cook, sauté peppers, onion, and apple in butter/olive oil until soft. Using a food processor combine all veggies along with stock including, peppers, onion, and apple; blend in small batches. Return pureed soup to the pot and add remaining ingredients, except cream. Simmer for 40 minutes, adding cream in the last five minutes of cooking. Add more stock and simmer if you like a thinner consistency. Enjoy!
