If the statement you are what you eat contains any truth then what are you if you eat lab made meat? I am not against the consumption of animal protein BUT I do believe we consume far too much of it. While debate exists as to the how far we should go when it comes to the idea of eating like our ancestors, considering that our ancestors lived in a vastly different time and perhaps, place. I think that as biological creatures we should perhaps consider, biology! Mindf...ul eating invites us to consider the things we ingest. To be thankful for them. To cherish every bite and consider how it feeds not just the body but also the soul. Let’s consider the facts: The planet cannot sustain animal farming to support the increasing demand/consumption of meat. Daily consumption of calories has been on the rise with many north Americans consuming an average of 3600 calories per day. Humans only require 1800-3000 calories per day (depending on gender, age, athleticism) Daily physical activity is declining, we are spending more time in front of screens and less time being physical. The food we eat is meant to sustain our activity. If activity levels are declining, then food consumption should decline. Quality of calories and balance of nutrients is more important than the number of calories IF we stay within targets that support current activity levels, age and gender. Soooo... . I’m thinking if we eat mindfully we won’t need lab made meat. Mindful eating invites us to consider the things we ingest. To be thankful for them. Happy New Year! After an indulgent night this Mediterranean salad bowl is the perfect lunch. I topped the salad (a mix of iceberg lettuce, savoy cabbage and cucumbers) with some leftover steamed rice, a mix of black, red and brown, that I warmed slightly. Topped it with marinated artichoke hearts, green and black olives, fresh mint leaves and green onion. I'm not much of a dressing person so instead I drizzled a good quality olive oil and some red wine vinegar over to...p. I am seriously in love with this rice mix, the nutty flavours and pretty colour! This is often my go-to meal after a late night of indulgent food.
