Just in time to those busy weeknight meals, Epicure Global Director Jacqueline McGrath has created this awesome recipeMac Muffins. INGREDIENTS 2 cups dry maca...roni pasta 1 Tbsp butter 1 egg 1 cup milk 3/4 cup of grated cheddar cheese 1 package Ooey Gooey Queso OR 2 packages of Mac & Cheese (for kids version) 4 strips of bacon 1 Tbsp of Better than Bacon DIRECTIONS Heat oven to 375 Cook 2 cups of macaroni noodles according to directions in 12 cup Multipurpose Pot. Drain and set aside. Cook bacon using the Multipurpose Steamer with tray inserted. Place 4 strips on tray, cover with lid and microwave on high for 5 minutes. Remove from pan and chop using ceramic knife. Add to noodles. Prepare sauce in 4 cup bowl. For kid friendly use 2 Mac & Cheese packages OR to spice it up use 1 package of Ooey Gooey Queso dip. Mix with 1 cup of milk then add 1 Tbsp of Better than Bacon. Add 1 beaten egg, melted butter and grated cheddar cheese to cooked macaroni. Add sauce and mix well. Spoon into silicone muffin pan and top with more cheese and bake in oven for 20 minutes. Remove, let cool and place in bag or container for an easy on-the-go meal or snack.

One of the best things about #WFH life is that you can make a delicious, healthy lunch like this Mexican Black Bean & Avocado Wrap. Use up whatever veggies you ...have on-hand and pile on the flavour Ingredients MAKES: 4 SERVINGS * 2 cans (14 oz/398 ml each) low sodium black beans * 1 pkg Azteca Tortilla Soup Seasoning (3 pkg) * 1/2 C (125 ml) 2% plain Greek yogurt * 1 Tbsp (15 ml) lime juice * 1 bell pepper * 1 avocado * 1 C (250 ml) spinach * 4 large whole-wheat tortillas, warmed Preparation * Drain and rinse beans. In Multipurpose Steamer, combine beans and seasoning. Cover; microwave on high 23 min, or until warmed through. Once warmed, smash lightly with a fork. * Meanwhile, in small bowl, combine yogurt and lime juice. Set aside. * Dice bell pepper and avocado. Thinly slice spinach. * To assemble, spread 2 tbsp yogurt mix on each warm tortilla. Top with beans, bell pepper, avocado, and spinach. Roll tightly.
