Do you struggle with quick lunch ideas while working from home? Try this filling salad formula: Layer on pre-washed leafy greens. Add pre-shredded chicken. You can pre-shred a store-bought rotisserie chicken. Add cut up fruit or veg of choice. In this salad, apples and strawberries were used. Top with a heart-healthy fat source, such as hemp hearts, avocado, or walnuts. ... Add your favourite dressing. My go-to is an equal mix of EVOO, maple syrup, dijon mustard, and apple cider vinegar - i make a batch of this at the beginning of each week and store in a jam jar Optional items: fresh herbs for extra flavor, such as mint, basil, parsley, or cilantro.
