Need a last minute Halloween treat? This Halloween snack may seem time consuming but I promise it’s quick and easy! Plus, they look so stinkin’ adorable (and I don’t mean Uncle Stinky) All you need are some organic apples and chocolate chips. If you are like me, there is a good chance you already have them on hand! ... Choose the apples that sit up the straightest, if possible and pull out any stems. Pierce a sucker stick into each apple. You can find these @bulkbarnfoods Melt some chocolate chips in a double boiler or in a non-plastic bowl that sits into a small pot. Bring the water to a boil and then turn off heat. Stir chips until smooth. Stick in your apple and spoon the chocolate on! Get creative with toppings such as chopped nuts or seeds, shredded coconut, white chocolate drizzle, candied ginger, flaked sea salt and more. Put on a baking sheet and let cool in the fridge. The chocolate should harden fairly quickly, especially if your apples are cool from the fridge to start. Finally had a chance to try the cutest little superfruit... the cucamelon! This fruit is perfectly suited for Insta because it is so stinkin’ adorable. But it is more than that: While much tarter than I expected, these little guys are packed with vitamins and minerals as well as water of course!... Lazy doesn’t mean unhealthy! It’s easy to equate laziness with processed or fast food but it doesn’t mean that eating healthy has to require hours of prep work or fancy recipes. Sometimes we need a quick snack or meal but we don’t want to be forced into takeout and there are tons of ways around that... Make sure every meal or snack includes a healthy source of carbohydrate (including a fruit or veggie), protein and fat for nutritional balance. Take today’s picture as a perfect example. Carb: GF whole grain cracker, protein: hemp hearts, fat: guacamole. Pair with some chopped or roasted veg and you have a surprisingly filling and healthy meal or snack depending on your portion size. Is this the perfect healthy meal? Likely not (although the definition of perfect varies). But it most definitely beats take out! Did you know that sea vegetables have more minerals than any land vegetable? And have you ever even called your vegetables land vegetables? Probably not because our culture rarely eats sea vegetables let alone includes them as a staple.
