Today’s addition to my Special Snacks and Party Food album could also come under the category of Creative Celebrations during Covid. This was Stefan’s creation - Friday night chicken nachos! Stewart and I got groceries during the day and when we got home, Stefan turned some of a deli chicken into this delicious meal. ... What I would have loved best would have been to share this special party food with our other son, Stuart, because it was his 23rd birthday. We did stop by Stu’s place for a quick outside, distanced visit, and when we got home, I sent him photos of his brother making (and us enjoying) the nachos. He told me that Stefan makes the best nachos and taught him to how make good nachos too. He also told me he has the same cheese grater and the same long hair! I told Stuart, I wish I could send you a plate (of nachos) through the internet. P.S. We don’t give birthday gifts to our kids any more, but we have missed so many birthday suppers and celebrations with Stuart through the years, that we decided to buy and give him a massive strawberry cheesecake. I forgot to take a photo of Stuart with his cheesecake, but I’m including a stock photo. Stuart told me that he cut himself a piece of cake the moment he got back into his home and that it was, Not as good as yours but still awesome.
On Thursday, I made pork cutlets (GF - from scratch) with creamy fresh dill sauce, veggie quinoa, steamed (from frozen) broccoli. I pounded the chops which I had cut and frozen myself - from a large loin of meat. I cut the edges so they wouldn’t curl. I lightly coated them with my own seasoned GF flour blend, then egg and then a touch more of the flour. I browned them each individually in my cast iron pan and then baked them while I browned the rest. The sauce has s...ome cream cheese and lots of the dill that we grow on our windowsill! The quinoa has onions, celery, carrots, and peas. The frozen broccoli is from Costco and is so much better than most frozen broccoli - it’s more full pieces and not all chopped up.
Stefan created this pasta dish on Tuesday! Isn’t it beautiful?! He made a creamy tomato fish and shrimp sauce on GF penne pasta. I plated my portion to look pretty. I made the salad with romaine lettuce, carrot, cucumber, tomato, dried cranberries, peanuts.
