Dinner is served! I roasted parsnips and carrots (I know, so autumn of me), steamed brussels sprouts and seared this triple A strip loin from @trulocal The carrots and parsnips were mixed with a bit of olive oil, garlic powder and oregano and the brussels sprouts were steamed and then finished in a pan with a dollop of grass fed butter and salt. #ahealthyfit #jknutrition #nutrition #nutritioncoach #nutritionist #balancedmeals #keepingitsimple

Long day on the road today so food is packed. The bell peppers, chicken, and vegan cheese are cut strategically to optimize finger food action for easy car eating. A couple of hard boiled eggs make a great satiating snack as they contain both fat and protein. Then there are some raw almonds for a dose of calcium and good fats, a @goodtogosnacks bar and some fruit for fiber.... and good measure. Lunchtime!! I’m serving you fast and convenient here. Chopped cucumbers and tomatoes, chickpeas and chicken with a crumbling of feta cheese. Topped with olives of course. Dressing was super simple, just a splash of olive oil, lemon juice and white wine vinegar & s&p. Was your dinner this pretty?? Very simple dinner here. I didn’t have much time to cook a meal so I pan fried this chop from @trulocal in garlic and apple cider vinegar and paired it homemade pickled beets, homemade apple cabbage slaw, and homemade baked apple (with skin) sauce, hence the gorgeous pink colour. Simple meals for Spring! A simple oil and vinegar dressed salad and piece of salmon from @trulocal topped just with some dill was the perfect meal. Salmon is a great source of the very essential Omega 3 fat which is good for joints, skin and heart health. Low starch and high fiber for a tasty post holiday dinner. Some (lots) shrimp done in a pan with avocado oil, garlic, basil, paprika and coconut flakes over too of riced cauliflower and a side of oven roasted vegetables. Iron and B12 restock meal. Paired this locally farmed, privately butchered from a small heard steak with steamed broccoli and sautéed cabbage and onions. This meal was post workout and full of protein to repair those torn microfibres . I salted this meal to help replenish electrolytes that I lost during sweat.... some salt is ok. for protein muffin realneas. Quinoa lunch/snack muffins! These are not vegan as I did crack 2 eggs into the bowl for protein content and to bind the mixture. I grated carrot and zucchini and added chopped garlic and then stuck in them in the oven and hoped for the best. Homemade tofu sticks! I used bread crumbs from remnants of home made sour dough bread that got stale. I keep canned legumes on hand for quick high fiber meals. I whipped this Moroccan chickpea stew up in a pinch for a delicious vegan lunch option. Sautéed up yellow peppers and onion then added the chickpea with cumin and chili pepper and some fire roasted canned tomatoes and 2 cups veg stock!
