Whipped these up today with the help of @baylymadden Been a while since we've put of a new flavour. Hope you enjoy! Chocolate Coconut Pistachio Energy Bites 3 scoops chocolate vegan protein powder- I used @gardenoflifecanada cocoa flavour ... 4 tbsp almond butter 3 oz coconut chips by @buddhabrandsco 1/3 cup crushed pistachio nuts 12 dates - pitted and diced Method. Mix all ingredients well. Add in small amount of almond milk and stir until thick dough is formed. Roll dough into 24 even bites. In a zip lock bag crush additional coconut flakes and shake bites one at a time. Leave in fridge to set overnight Bon appetit! These delicious creations are filled with tasty fuel thats easy to take on the go. Pumpkin Spice Latte Ingredients... 1/2 cup espresso (or strongly brewed coffee) 1 cup unsweetened vanilla almond milk 1 tablespoon pure maple syrup 1 tablespoon pumpkin puree 1/2 teaspoon pumpkin pie spice Whipped cream (real) *Optional* Cinnamon to taste Brew coffee and cool. Sweet Potato Pecan Muffins Ingredients 2 cups steel cut oats 1 cup egg whites... 1 whole egg 1 cup cooked, mashed and cooled sweet potato 2 mashed bananas cup coconut yogurt cup chopped pecans 2 tbsp. pure maple syrup 1 tbsp. pure vanilla 1 tbsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg Fresh peel thumb of ginger Pinch of sea salt Method Cook potatoes whole, skin on in oven. Scoop out middle and use in recipe once cooled. Preheat oven to 350 degrees. Grease 6 large muffin tins with coconut oil. Pour batter in evenly and bake for 30-35 minutes.
