Anyone else more than ready for the weekend? Skip the takeout line and dine in on a Tex-Mex inspired meal that delivers with good food flavour. Saucy Queso Ch...icken Ingredients 1 lb (450 g) boneless, skinless chicken breasts, about 2 1 pkg Ooey Gooey Queso Dip Mix, divided 12 tbsp oil 1 12 cups milk, your choice 12 cup grated cheddar cheese 12 avocado 1 lime Toppings (optional): crushed tortilla chips, pickled jalapenos, Poco Picante Salsa Preparation To thinly slice chicken, place one hand on one breast and press down firmly. Curve fingers up slightly for safety. Carefully slice meat horizontally. Repeat with the remaining chicken. You should have four pieces in total. Season chicken with 1 tbsp Hot Dip mix. Heat oil in a large frypan over medium-high heat. Add chicken; cook 45 min per side until golden brown and cooked through. Meanwhile, prepare queso sauce. In Multipurpose Steamer, whisk remaining Hot Dip mix with milk. Microwave, uncovered on high for 45 min, or until thickened. Whisk halfway through cooking. Remove from microwave. Stir in grated cheddar. Thinly slice the avocado. Cut the lime into quarters. To serve, spoon queso sauce over chicken, top with avocado and lime. Add additional toppings, if desired.

Fish Tacos with Lemon Dilly 12 lb (225 g) white fish 1 tsp Taco Seasoning 14 cup Lemon Dilly Dip, prepared 3 radishes, thinly sliced 1 cup shredded lettuce 4 corn tortillas 1 recipe prepared Poco Picante Salsa Preparation Season both sides of fish with Taco Seasoning and place in a Rectangular Steamer. Cover and microwave for 3 minutes on high. Spread tortillas with Lemon Dilly Dip. Top with lettuce, radishes, and salsa.

What's for dinner? Warm up with this #BetterThanTakeout Sheet Pan Caprese Chicken 1 large ball fresh mozzarella, about 226 g 2 medium field tomatoes 2 lbs (900... g) boneless, skinless chicken breasts, about 4 4 tbsp Rosemary Garlic Seasoning 1 cup Greek Dressing, or your choice of dressing, prepared Sea Salt (Grinder), to taste Black Pepper (Grinder), to taste Toppings (optional): Fresh spinach leaves Preheat oven to 425 F. Line Sheet Pan with Sheet Pan Liner. Slice cheese into eight slices. Slice tomatoes into four slices each. Set aside. Cut chicken breasts in half. Place chicken on lined pan; coat with seasoning. Roast until chicken is cooked through, about 1518 min. Top chicken with sliced tomato and cheese during the last 5 min of cooking. To serve, drizzle dressing on top. Season with salt and pepper, if desired.

For the Holiday bake sale at my son's school we often made giant marshmallow pops, so ...the other day we had fun making just a few to enjoy at home. We used chocolate chips, crushed candy canes as well as Cocoa Crunch and Summer Berry. Summer Berry was our favourite combination with dark chocolate chips Depending on how many pops you are making, melt the chocolate at 30 second intervals in the microwave an stir in between, until it's all melted. Stick the lollipop stick into the marshmallow, then dip into the chocolate. Over a plate or bowl sprinkle the toppings while rotating the marshmallow. I let ours "dry" on a silicone mat. If you want to speed up the process, put them in the fridge for half an hour and then they are ready to enjoy! **If you plan to give these away and use the fridge to cool, make sure they come to room temperature before packaging, otherwise there will be condensation on them that may make it all sticky and wet.
