#BetterThanTakeout: Yam Enchiladas Cheesy tomato flavour coupled with antioxidant-rich yams makes this dish delishand in less than 20 minutes! $1.60/serving Ingredients 2 12 cups diced yams... 1 tbsp Guacamole Dip Mix 6 corn tortillas 1 can (19 oz /540 ml) diced tomatoes 2 tbsp Nacho Cheese Dip Mix grated low-fat cheese Preparation Combine yams and Dip Mix in a Multipurpose Steamer. Cover and microwave on high for 34 minutes. Mash lightly with the back of a fork. Fill tortillas with yam mixture. Roll and place seam-side down in a Multipurpose Steamer. Stir Nacho Cheese Dip Seasoning into the diced tomatoes, and pour over rolled tortillas. Sprinkle with cheese, cover with lid, and microwave on high for 5 minutes.

Pucker Up Lemon Cupcakes Ingredients... 12 cup unsalted butter, softened 1 cup granulated sugar 2 large eggs 1 tbsp grated lemon peel, about 1 lemon 2 tsp vanilla extract 1 12 cups all-purpose flour 1 tsp baking powder 14 tsp salt 34 cup milk, your choice 12 - 1 recipe prepared Luscious Lemon Curd Icing Preparation Preheat oven to 350 F. Place two Muffin Makers on two 14 Sheet Pans. Generously oil both Muffin Makers. In a large bowl, using an electric mixer on low-medium speed, cream butter and sugar. Add eggs, one at a time, until smooth. Beat in lemon peel and vanilla. In a separate bowl, combine flour, baking powder, and salt. Gradually add the flour mixture to the egg mixture. Batter will be very thick. Add milk; beat on low speed to avoid splashing. Spoon into moulds. Bake 2530 min or until a toothpick inserted in the centre comes out clean. Cool in pan 1015 min. Invert on a Cooling Rack and gently squeeze each muffin cup to release. Once cupcakes are completely cool, top with icing.

Microwave on high, with lid on, for 10 minutes. Mash potatoes with milk and butter until desired consistency.
