I love granola! FYI when I ate this, I put 10 times more granola in my bowl This batch is simple, which makes it perfect to add to anything. It’s also full of healthy fats and plant-based protein. Oats, quinoa, sunflower seeds, pumpkin seeds, cashews, chia and flax with a pinch of salt, coconut oil, sunflower butter and maple syrup mixed together and baked at 300F for 20 min per side. . .... . . . . #granola #vegan #fromscratch #joyfulnutrition #protein See more
With wedding planning, day job, and JN, my days have been pretty busy! Busy day meals look like this! A bunch of roasted veggies with quinoa over chopped greens. Also, I didn’t even chop my greens. A big bowl of lemony sautéed zucchini, cauliflower and kale with pesto quinoa & chickpeas. Loads of flavour and so easy to make. I made a pesto with fresh basil, kale, parsley, garlic, sunflower seeds, lemon juice, olive oil and a pinch of salt.
