Happy National Bean Day! If you want to make just one change to your diet to benefit your health, what would it be? I often tell clients to add more plant-based proteins to their diet! And it doesn’t have to be all or nothing. Start where you’re at and add a plant-based snack or meal a week or more. How to do it? Why not try some nutritious beans after all, it's national bean day! You can eat them for snacks, serve them as toppings or sides, add them to soups or salads, an...d more! Beans are packed with nutrients: high in protein, fibre, vitamins and minerals and low in fat. There are many choices for beans and various canned and dried beans at the store. Dried beans are cheaper and have no sodium but take time to prep and cook. Canned beans are ready-to-eat and convenient. Look for no added salt beans such as PC Blue Menu beans. Simply drain and rinse them well before serving. I often work with clients to eat a balanced breakfast including protein, whole grains and fruit. Voila! These Oatmeal Lentil Cups include it all. The secret ingredient of lentils adds a boost of protein, fibre, iron and other vitamins and minerals. I’ve adapted the recipe using ...dried apricots and adding some yogurt to make the muffins moister. They are delicious warm. Serve with fresh fruit. Craving something warm, delicious and seasonal? Try this delicious pumpkin spice latte! It’s one of my favourites at this time of year when the days are getting colder and pumpkins and pumpkin flavour are everywhere. It’s a great way to enjoy milk, with protein, calcium and vitamin D. And it’s sure to satisfy! - 1 cup of milk (or soy beverage) - 1 tbsp maple syrup - 3 tbsp pumpkin puree (canned) ... - 1/2 tsp ground cinnamon - 1/4 tsp ground nutmeg - 1/8 tsp ground cloves - 1 tsp vanilla - 1/4 cup strong coffee (or 1 espresso) - Optional : 1/2 cup of foamed milk for topping 1. In a saucepan, add the milk, maple syrup, pumpkin puree, spices and vanilla. Heat the mixture over medium-heat and stir constantly with a whisk. 2. When the milk starts to boil, turn off the heat. 3. Pass the mixture through a sieve. Add the coffee and mix together. 4. Divide the latte in 2 big glasses, up to 1/2 inch from the rim. 5. Add the milk foam (if desired) and sprinkle with cinnamon.
