Individual cheese stuffed turkey meat loaves. Made in a muffin tin with lots of garlic, Italian seasoning, stuffed with a generous amount of mozzarella and topped with zesty tomato sauce and Parmesan. New to the blog, my recipe for One Pot Lemon Chicken and Orzo. This family friendly *easy* recipe is on regular rotation in our house. Featuring boneless, skinless chicken thighs, broccoli, mushrooms, orzo and topped with a bit of parmesan. So delicious! Make extra so you have leftovers! Hockey season has started for my kiddos - we are so busy (I’m sure you can relate!) and I’m finding these one pot dinners are saving me. We tried the classic beer can chicken on the BBQ last week. Delicious! If you haven’t already tried this yet, you must! I have all the good chef knives but we still love our silly retro electric knife for carving. It works perfectly even if it does sound like a chainsaw .

Have you tried my chicken Parmesan sheet pan dinner yet? Easy to prepare and a meal that the whole family will love . I use panko crumbs because they are lighter and crispier than regular bread crumbs they work really well in this recipe. Feel free to add any of your favourite veggies. Brown butter peaches & apricots with whipped mascarpone and amaretti. Who loves summer fruit? And easy desserts?? Here’s what you need: 275g container mascarpone 2 heaping tbsp powdered sugar Juice and zest of half a lemon... Add to mixer and whip on high speed until blended. Set aside. 4 peaches 4 apricots 3 tbsp butter 3 tbsp brown sugar 1/2 cup crumbled amaretti biscuits Halve peaches and apricots and remove pits. Heat butter over med high heat in a grill pan. Add peaches and apricots and cook until grill marks form and fruit is warmed through but still firm and butter is browned. Place fruit on a circle on serving platter, sprinkle with brown sugar and amaretti biscuits. Add mascarpone to the centre and serve.

Rosettes of prosciutto, fresh black figs, toasted pine nuts and creamy burrata over a combination of arugula and baby romaine. All that’s needed to dress this salad is a drizzle of good quality olive oil, balsamic glaze and some cracked pepper and salt. #eatgoodfood

So not ready to let go of summer yet so tonight we’re grilling burgers on the BBQ and having a little succotash on the side. My version has sweet corn, heirloom cherry tomatoes, pinto and black beans and lots of bacon.
