Cute festive snack! AVOCADO CHRISTMAS TREES - from Feeding Finn; Serves: 4 trees INGREDIENTS... 1 tortilla wrap 1 avocado (mashed) 10 cherry tomatoes (halved) 2 slices of cheese INSTRUCTIONS - Spread the mashed avocado over the tortilla wrap and then cut into quarters. - Using a small star cookie cutter cut out 4 cheese star shapes. Place on the top (tip) of each tortilla wrap quarter - Place 5 tomato halves onto each quarter to represent the baubles.

Love me some quinoa! California Quinoa Salad - delicious and healthy! Quinoa is a great grain alternative for those following a vegetarian or vegan lifestyle. The protein in quinoa is complete, meaning that it contains all the essential protein building blocks (called amino acids) that our bodies need. Quinoa is also a good source of iron, zinc, magnesium, and manganese.... 1 cup quinoa 1/4 cup balsamic vinegar Zest of 2 limes 1 mango, peeled and diced 1 red bell pepper, diced 1/2 cup shelled edamame 1/3 cup chopped red onion 1/4 cup unsweetened coconut flakes 1/4 cup sliced almonds 1/4 cup raisins 2 tablespoons chopped fresh cilantro leaves Instructions In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside. In a small bowl, whisk together balsamic vinegar and lime zest; set aside. In a large bowl, combine quinoa, mango, bell pepper, edamame, red onion, coconut flakes, almonds, raisins and cilantro. Pour the balsamic vinegar mixture on top of the salad and gently toss to combine. Serve immediately.

ONE POT TACO ZUCCHINI NOODLES - from Kerbie's Cravings; serves 4 INGREDIENTS: 1 tbsp olive oil 2 large zucchinis, spiralized... 1 lb lean ground turkey 1 clove garlic, minced 1/2 small brown onion, peeled and finely chopped 3 tbsp of homemade taco seasoning (or one packet of your favorite taco seasoning) 1/4 cup water 14 oz can diced tomatoes 1/2 cup shredded cheddar cheese fresh cilantro leaves one lime, sliced into wedges HOMEMADE TACO SEASONING 1 tbsp chili powder 1/4 tsp garlic powder 1/4 tsp onion powder 1/4 tsp dried oregano 1/2 tsp paprika 1 1/2 tsp ground cumin 1 tsp table salt 1 tsp ground black pepper DIRECTIONS: - In a large pan or skillet, add olive oil and bring to medium high heat. Add zucchini noodles and cook until zucchini release water and are just cooked. Drain water and remove noodles from pan, setting them aside for later. - Add garlic, onions and ground turkey to your skillet. Cook until ground turkey has browned, crumbling the ground turkey as you cook it. Drain out excess fat. - Sprinkle taco seasoning across turkey. Add entire contents of the diced tomatoes (including the liquid), 1/4 cup water and stir into the turkey mixture. Stir and cook on medium heat until everything is evenly mixed, turkey is cooked through, and sauce has thickened. - Turn heat down to low and add in zucchini noodles. Gently toss zucchini into the sauce, but be careful not to cook the zucchini further or else the noodles will release more water and make the sauce watery. Sprinkle cheese over the pasta. Turn off heat and cover with a lid until cheese is melted. - Garnish with cilantro and squeeze lime juice if desired before serving.

Big Mac In A Bowl Ingredients: 2 Tbsp diced yellow or white onion 5 oz. 95-97% lean ground beef... 2 Tbsp Wish-Bone Light Thousand Island Dressing 1/8 tsp white vinegar 1/8 tsp onion powder 3 cups shredded romaine lettuce 2 Tbsp reduced-fat shredded cheddar cheese 1 oz. dill pickle slices 1 tsp sesame seeds Cooking spray Directions: 1. Heat a small, lightly greased skillet over medium-high heat. Add the onion and cook until fragrant, about 2 to 3 minutes. Add the beef and cook until fully browned. 2. Meanwhile, mix together dressing, vinegar, and onion powder. To assemble: Top lettuce with ground beef and sprinkle with cheese. Top with pickle slices, drizzle with sauce, and sprinkle with sesame seeds. 1 serving

Yummmm!! Quinoa, Black Bean and Corn Tacos Prep Time: 10 minutes... Cook Time: 30 minutes Total Time: 40 minutes Servings: 5 Ingredients 1 Tbsp olive oil 1 medium yellow onion, diced 3 cloves garlic, minced 1 1/2 cups chicken broth or vegetable broth 1 (14.5) oz can diced tomatoes with green chilis 3/4 cup dry quinoa, rinsed and drained 1 1/2 tsp chili powder 1 tsp ground cumin 1/2 tsp paprika 1/8 tsp cayenne pepper, then more to taste (optional) Salt and freshly ground black pepper, to taste 1 1/2 cups frozen corn 1 (15 oz) can black beans, drained and rinsed juice of 1 lime 1/4 cup chopped cilantro Serve with: Corn tortillas, warmed Chopped lettuce Monterey jack or cheddar cheese Diced avocados Diced tomatoes Instructions Heat olive oil in a large non-stick saucepan over medium high heat. Add onion and saute 3 minutes. Add in garlic and saute 1 minute longer. Stir in broth, diced tomatoes, quinoa, chili powder, cumin, paprika, cayenne and season with salt and pepper to taste. Bring mixture to a boil, then reduce heat, cover saucepan with lid and simmer until quinoa is cooked through, about 15 minutes. Stir in corn and black beans, simmer until warmed through, stirring occasionally, 5 minutes longer. Mix in lime juice and cilantro. Serve warm over tortillas with desired toppings. Mmmmm!!! Who else wants to try this?! Quinoa Avocado Spinach Power Salad - from The Garden Grazer; serves 4... Ingredients 1 cup dry quinoa 2 medium avocados 3 oz. baby spinach 8 oz. cherry tomatoes 3 green onions {For the dressing} 1-2 cloves garlic, minced (I use 2) 2 Tbsp. red wine vinegar 2 Tbsp. olive oil 1/8 tsp. salt Directions - Cook the quinoa according to package directions. - Meanwhile, make the dressing: in a small bowl whisk together ingredients and set aside. - Roughly chop the spinach and place in a large bowl. - Slice the green onions, halve the cherry tomatoes, and dice the avocado. - When quinoa is done cooking, add it to the large bowl with spinach and toss. The heat from the quinoa will lightly wilt the spinach. - Add the green onions, tomatoes, and dressing. Stir to combine. - Add the avocado and lightly toss. - Serve immediately or refrigerate to let flavors blend more.
