I recently joined my first culinary cooking competition and it was such a fun experience. I avoided doing competitions because I never felt comfortable and I usually don't like cooking with time constraints. Overall I had a really great time, it was really fun to interact with the hosts, and judges throughout it and it almost felt like I was sharing and cooking with friends. My dish was made with really humble ingredients : Ginger, milk, chicken. The secret ingredient was On...tario Taleggio. It inspired by a conversation with my mom and with me being stubborn about making a classic Asian dish with cheese in it. I've always cringed talking about my culinary background and achievements. But I thought it would be nice for everyone to get to know the person behind k.dinners and k.dumps. . My first job was Nota Bene where I met some of the most amazing mentors. . Scaramouche taught me about ingredients and classic French cooking. Still collecting mentors ... . LPW was my first experience cooking and plating tasting menus. I also got to experience a life that I was so familiar with but never knew . . The Fat Duck humbled me and taught me what dedication meant. Even though I was so far away from home it felt like a family there . . Dinner by Heston was a hard lesson but an important one. It showed me the importance of finding a work/life balance . . K.dinners and k.dumps started 3 years ago and it's become an outlet to showcase all my experiences around the globe and also my Hong Kong background and heritage. .
