A remarkable story! It all started on a sunny winter's day in Toronto when our customer was walking her dog. In her haste to get home, she fell on the ice and landed on her hands and knees . When she got home to survey the damage, she discovered that her ring was buckled and her diamond was missing! Losing her treasured diamond caused much more pain than the grazes to her wrist and knees! Together with her husband, they went back to the area where she fell, and they started ...looking for a diamond in the rough, literally! It wasn't easy between all the grit after a snowfall, but 15 minutes later, a little shiny stone caught their eye! Our customer decided to redesign her engagement ring into something different, as long as it had the original diamond from 47 years ago! From Old to New! This magnificent 14k sapphire and diamond halo ring was transformed from an outdated design, to this modern, stylish stunner! Now that we're in lockdown (again) I'm still open for curbside drop off and pick up. In the meantime, you'll find me back in the kitchen slicing, dicing and stirring - Sandy says I'm really good at that! This hearty, healthy LENTIL SOUP has become our family's favourite winter comfort food. INGREDIENTS:... 3 Tbsp olive oil 2 medium onions, finely chopped 4 cloves garlic, minced 2 tsp ground cumin 1/2 tsp cayenne pepper 1 1/2 cups green or brown lentils, rinsed (add an extra cup for thicker soup) 4 cups vegetable or chicken stock 4 cups water 1 8oz bag of spinach, washed and tough stems removed (or equivalent frozen spinach) 2 tsp dried mint or 1/4 cup fresh mint salt and freshly ground black pepper to taste zest of 1 lemon 3 Tbsp lemon juice plain yogurt, optional garnish METHOD: In a large pot, heat 3 Tbsp oil over high heat. Add onions and cook, stirring, for 3 mins. Turn heat down to medium-low. Cook until lightly golden, approx. 3 mins. Stir in garlic and cook 2 mins. Stir in cumin and cayenne, cook 30 secs. Add lentils, stock, water and spinach and raise heat to high. When it boils, reduce to simmer and cook until lentils are soft, about 30 mins. Blend, adding mint, salt, pepper, lemon zest and juice. When ready to serve, simmer and season to taste, adding more salt, pepper or cayenne, if desired. Ladle into bowls and garnish with dollop of yogurt, optional. Makes 6-8 servings. We are proud to be running our 5th annual Christmas campaign supporting women and children at Yellow Brick House, who have experienced abuse. There's nothing quite like spoiling yourself on your special day! One of our favourite customers did just that for her 65th birthday! She found some long-forgotten rings collecting dust (before pic with stones removed) and designed a magnificent double halo, split band diamond ring (after pic) using most of the original diamonds.
