Olive oil Balsamic vinegar or reduction Salt and pepper to taste Preheat a nonstick frying pan over high heat. Sear the cheese in the hot pan until each slice develops a deep brown crust, about 1 minute on the first side and 1 to 2 minutes on the other. Brush with oil as needed. Plate the fried cheese and garnish with the salt, pepper, oregano, tomatoes, and balsamic.

Sweet and Spicy Korean Chicken Wings 6 pounds chicken wings (about 24) Kosher salt Freshly ground pepper... 1/3 cup gochujang (Korean chile paste) 2 tablespoons raw honey 1 tablespoon toasted sesame oil 1 tablespoon water 2 teaspoons unseasoned rice vinegar 2 teaspoons tamari soy sauce 2 teaspoons minced peeled fresh ginger 1 teaspoon minced garlic Sesame seeds thinly sliced scallions or cilantro for garnish Season and bake wings at 350F for 30-45 minutes or until cooked through. Saute cooked wings in a pan to crisp and brown skin. Add rest of ingredients to pan, tossing to combine. Garnish with sesame seeds and scallions/cilantro.
