Thank you Jan and Claudia at @teakan.co ! Posted @withregram @jansfoodsteps + I recently picked up some bean to bar chocolates from Kasama and thought it'd be fun to try them with teas from Teakan. The pairing ideas for this session were:... Sheng Pu'er with the Raspberry White Chocolate Qi Lan Oolong with the Single Malt Dark Chocolate Findings: The raspberry chocolate made the sheng pu'er taste more fruity and "juicy". The flavour reminded me of an orange's sweet-tart taste. I didn't like it at first because the two made each other tasted more sour. But at the second round I picked up the fruitiness from the tea and it was quite nice. I thought the mineral flavour of the Qi Lan cliff tea would work with the Single Malt but there was no spark there. The dark chocolate has a smooth barrel aged "wood flavour" so next time I'm going to try it with a shu pu'er. Have you tried pairing food with your teas? Feeling completely humbled and honoured. We received quite the boost last Thursday with the exciting news that our chocolate won 10 awards at the International Chocolate Awards, Americas Competition in New York. It was especially nice to hear that 3 of our bars made with Philippine beans were recognized (2 golds, one bronze). This origin is very special to us; it's not often seen in the craft chocolate world, but having worked with Philippine beans since we started in 2015, ...we know first hand that they have some fantastic flavour profiles. Below are our winning bars and the categories they won in. Congrats to all the craft chocolate makers out there, and especially to the cacao farmers who grow and ferment such amazing beans. It all happened because of small yellow fruits that were growing wild on Vince`s family property in Philippines. The man, the myth, the legend. Klaus on the Haus. This new experimental micro-batch is an ode to our tie-dye wearing contractor and his team who helped build our amazing new chocolate workshop on Granville Island. You might have seen him pop up in our insta stories over the last few months, or you might have bumped into him at Bass Coast, Shambhala, or other local music festivals. One day during construction, Klaus asked, "Can you smoke chocolate?". After some experimentation... the answer is yes! First we roasted our Costa Esmeraldas cacao beans, then they were cold smoked using organic Okanagan apple wood, before being conched in our stone grinder. Pairs nicely with a hefty stout, or some post-modern psychedelic rock. You can find the new bar online, or at our shop this weekend (fri-sun 10-5pm). They also did a special limited release bar to celebrate the occasion a Swiss-style #milkchocolate/#darkmilk bar called "Milch + Schoggi", complete wi...th Swiss colours and Helvetica on the label. I'm a twist, they use Philippine #cacao. So smooth and creamy/milky! It's a mellow orgasm for your tongue ! The Single Malt is back. For the month of December, these Costa Esmeraldas cacao nibs hibernated inside an oak cask together with @oddsocietyspirits Commodore single malt whisky, soaking up the flavours of the wood and spirit. This batch was started at our old digs on Napier St., and the barrel came along for the ride to our new shop on Granville Island, so it still has a bit of East Van in it ;). Some of us also still live in that hood, and while we absolutely love our new h...ome, Kasama will always have a splash of East Van in it too. You can find the Single Malt online, or at the shop. We're open Friday to Sunday from 10-5pm. The opening of our new shop last weekend was super exciting, and it was great to see so many new and familiar faces; it sure was wet, though . We're open again today and throughout the weekend (10-5pm), and we've made a 2nd batch of the limited release Milch Schoggi bar. Cacao has been consumed in South and Central America since ancient times, but it was in Switzerland that the ‘conch’ was invented which gave us the smooth, solid form of chocolate that we know today. Dom’s f...amily is Swiss, so we figured it was about time that we made a ‘swiss style’ milk chocolate (the Swiss call chocolate 'Schoggi'). With our in-house roasted Philippine cacao beans providing the base, we took the creaminess up a notch by using whole cream powder made from Swiss alpine milk. At 55% cacao, this dark milk chocolate is massively creamy, but just dark enough for the flavour of the beans to yodel at your palate. EXCITING NEWS!!! We will be officially opening our new chocolate shop on Granville Island (@granville_island) this Friday, January 1st! Our shop, at 2-1244 Cartwright Street, will be open to the public on Friday, Saturday, and Sunday from 10am-5pm. The pandemic will make this a rather different ‘grand opening’ than we had envisioned, but we’re very excited to have you over, even with masks and at a distance. There may even be a secret special release, just for the weekend :)... As a new year begins, we thought we’d reflect back on the past and tell you a bit about ourselves and our journey into chocolate. Stefan and Oliver grew up in the Kootenays, and have known each other since 8th grade. Vince and Dom grew up in North Vancouver and went to the same school. Years before Kasama, we first got to know each other playing in a friendly weekend roller hockey league. Stefan played forward, Oliver defence, Dom goalie, and Vince played everywhere. Strangely (or not), we play much the same roles at Kasama today. Over the years we hung out frequently, and Dom and Stefan even became roommates. Everything was chill, or so it seemed.Then one fateful day in 2015, Vince showed us pictures of some yellow fruits (cacao pods) growing on his family’s plot of land in the northern Philippines. Soon after, that once tranquil house in East Van started rumbling every weekend with the sounds of stone grinders, hair dryers, shaker tables, and other strange contraptions. Turning this from a friendship project into a business has not always been easy. We’ve all felt the stresses, and there have been some near breaking points. But there’s one thing we’ve always agreed on: our friendship is more important than the business. We could never have gotten this far alone, though. From the start, it really hit home how interconnected we all are. By sharing your enthusiasm for what we do, you’ve also been a part of our journey, and perhaps we’ve been a small part of yours.
