I LOVE discovering new-to-me vegetables to explore the flavours of. My most recent discovery, Jerusalem artichokes. They are a tuber and a little finicky to clean, but so worth it! I find a veggie brush and water the best at getting the dirt off. For the ones with knobby parts to them, break those off so you can scrub them and in the crevices. No need to peel. These were tossed in a little olive oil and seasoning, then roasted. They have a nutty flavour. An awesome potato substitute. We enjoyed them with eggs this morning.

I so love creating with local produce. Fresh brussel sprouts! Yum!!! If these aren’t your fav and you’ve only had them steamed to a mushy death - try roasting them. ... Clean, cut off tough ends & cut in half. Toss with your favourite oil or bacon fat. Add seasoning of your choice - favourites here include cajun or a quality all purpose seasoning. Roast away. Fresh ones cook much quicker. Depending on the size, start checking them at 8 min. if they’re tiny (the size of a marble or smaller), for larger ones, start checking at 11 min. Enjoy!!
