Path to Wellness 30.04.2021

My family and I recently become addicted to this easy to make red lentil chili and it is now one of our weekly staples. We love to eat it with rice or home made naan & and garnish it with green onion and/or cilantro . Here is the recipe: 3 medjool dates, blended in water... 3 cups of water 15 oz can diced tomatoes 3 oz tomato paste 1 paper, diced 1/2 onion, diced 1 cup dry red lentils 1 tsp chili powder 1 tsp paprika Preparation: > Blend your dates with 3 cups of water you can also add garlic. If your dates are hard let them soak in water for about an hour > Prepare and place all the ingredients in the instant pot. > Set the cooker to pressure cook for 17 min. Set the valve to sealing. > Once the time complete let it naturally release pressure. > If you're cooking on the stove top, bring to boil, lower heat to simmer, cover & let it cook for 30 min or until thick Enjoy!

In the last 7 years I've learned so much about creating a healthier and happier life for myself with many challenges but also great achievements. Plant based lifestyle has helped me tremendously on that path but certainly wasn't the only answer. This is bacause we are not just what we eat, we are also what we think, who we spend time with, how we move, how we breathe, when we sleep, how we laugh, what we feel....how much we allow ourselves to just be us.... Sometimes we focus with so much effort on the perfect way of eating that we forget all the other things that make us feel amazing in our physical body but also mentally and emotionally. Right now I'm enjoying walks in nature, running in the cantryside, working out in fresh air, enjoying some me time alone, meditating and visualizing, creating new future plans and laughing out loud while watching funny movies with my family. What kind of moment are you embracing right now, what makes you feel amazing. I hope you have beautiful day today!

1 year later , 4 exams and over 100 dietary theories later...I did it !! I'm supper happy to Announce that today I'm officially graduating from the Institute for Integrative Nutrition @nutritionschool as a Health Coach. I'm so grateful that I took a leap of faith and dove into my studies at IIN. This school truly changed my outlook on life.... One of my favorite savory high protein meals is tofu scramble. This healthy breakfast is not only super easy to make but also is very yummy. Here is what I've used today to make my tofu scramble. Ingredients:... Aprox 150 g of Extra firm tofu ( I used organic sprouted tofu by Sol Cusine ...note: the tofu should be organic) 2 mushrooms ( low calorie souce of fiber, protein and antioxidants ) 1/2 pepper ( source of Vitamin A & C) 2 green onions ( source of vitamin K & C) 1 leaf of kale finaly chopped ( good source of vitamin A, K & C) 1 tbsp nutritional yeast ( this is good source of B12 vitamin as well as Tiamin, Ribofkavin, Nacin, B6, Folate) 2 tbsp of avocado oil ( healthy source of fat) 2 tbsp Bragg Liquid Soy seasoning ( optional) 1 tsp of turmeric (curcumin compound in turmeric anti-inflammatory & antioxidant) 1/2 tsp black pepper (enhences absorption of curcumin by 2000% ) 1/4 of avocado ( Excelent Source of Potasium, loaded with Fiber, leaded with heart-healthy minosaturates Fatty Acids, can lower cholesterol & triglycerides, powerful antioxidant) Preparation: Cut the vegtables, place all vegtables in the pan except kale the avocado oil and lightly cook until tender. Remove the vegtables from the pan and place them bowl. In the same pan place tofu and mash it with the fork , add soy souce, turmeric, black peper , cook it for aprox. 3 min on medium high stirring with the fork, and 1 tbsp of water is it starts to stick to the pan. Add the vegtables , kale & the nutritional yeast mix, cook for 1 more min. Topped it with avocado. Enjoy! See more
