We're making honey beer, with our pals from Highline Brewing in Inglewood! What should we call it? This beer is a collaboration between ABC Bees, Highline Brewing, and us. We're using honey from the 2020 harvest from the hives that we sponsor with Eliese and ABC Bees. Last Thursday brewer JJ invited Nathan in to "help" with the brewing and learn about the process. He started by softening the 18kg of honey in warm water, and tempering it with hot wort to help it ease into... the sour beer mash. Some honey was reserved for finishing in two weeks. A light quantity of hops were added, and apples were frozen, cored and infused into the beer to compliment the honey flavour. After filtering and cooling, everything was added to the fermenting tank and JJ added a robust ale yeast to devour the delicious sugar in the honey. Now we wait! In 2 weeks time we will taste and adjust with the reserved honey, clarify the beer and bottle. Stay tuned! See more
