BODACIOUS RED FRENCH ONION SOUP

Following my Mum’s celebration of life gathering there was so much food in the fridge I decided for dinner to grab the first ingredients I see and make something. Here are two results: The first is vegetable and bean soup with dumplings stuffed with pesto & mozzarella. The second is Pizza Rice. I called it this as the main ingredients I found in the fridge were pepperoni & mozzarella cheese!

I have been cooking up a storm. From Sunny-side up eggs with oatmeal wholewheat pancakes, Guyanese Curry Chicken & my perfectly fluffy jasmine rice to pork loin chops and strawberry cherry jam, coconut bread pudding and Orange Ginger Chilli marmalade !

Now I dont know how best to do this retrospective of all the dishes I have cooked and baked goods I have made in the past 3/4 months. It may take a while to catch up. This past week was perhaps my most productive in a while.
