Loaded with goodness this fast and easy quinoa stir fry is a great breakfast or lunch idea. AlwYs keep some cooked stir fry in your fridge and add all your favorite spices and whatever you’ve got in the fridge . Hats off to Jim Tovey and his vision to turn 26 hectares of Lake Ontario shoreline into a beautiful Conservation area. Saturday was the last day that the public was able to see through the lens of some very talented photographers how the transformation from Rock to Rubble into a Green Oasis is morphing. I hope these talented photographers will continue documenting the transformation through their art so that We, The Public can fully appreciate and understand all that is involved in such a phenomenal project . Just went cherry picking - on our front lawn ! Still discovering all kinds of things at the new house including this beautiful tree that is bursting with Sour cherries . Sour cherries help with so many things including improve sleep, improve endurance, decrease muscle soreness /inflammation and more . This Asian slaw is a great way to eat your colours ! Enjoy a variety of vegetables without having to spend too much money or time preparing . Ok, there is a bit of chopping involved but you can always cheat a little and buy the prepared vegetables available at the supermarket today,like shredded coleslaw and grafted carrots if you are short for time . Here I paired it with turkey meatballs which was delicious. Dressing : Honey, olive oil, rice vinegar, tamari, sesame oil, p...eanut butter, siracha, fresh ginger and garlic and fresh lime juice. Mix your vegetables like shredded cabbage red and white , Napa cabbage, red pepper, cooked edamame, green onions and fresh herbs like cilantro and basil. Mint is also always nice especially in the summer. For the turkey meatballs I mixed the turkey meat with Panko bread crumbs, chopped cilantro, finely chopped ginger, sesame oil, garlic, red pepper flakes. Baked at 350 for 15 min. In the meantime prepare the sauce in a medium saucepan whisk together the soy sauce and cornstarch gradually whisk in soy sauce, honey, hot sauce fresh garlic, minced fresh ginger root and sesame oil. #asianslaw#turkeymeatballs #healthyfood #eatlocal #salads See more

Hail to Kale!! This incredibly hearty cruciferous vegetable is a nutrition superstar due to the amount of vitamin K, A,C, potassium, calcium and manganese it contains. One cup of Kale is only 33 calories. The Tuscan Kale also known as lacinato Kale or dinosaur Kale is not as bitter as curly Kale. It’s great in soups, stews and salads. For this dish I took a bunch of the Tuscan Kale chopped it into fine pieces added grated carrot, red cabbage, and green onion also finely chopp...ed . You can add celery and seeds such as sunflower or pumpkin. Stay away from veggies that go soft like cucumber or tomatoes so that any leftover still tastes great after a few days in the fridge . For the dressing I used apple cider vinegar or lemon juice, some Tamari, sesame oil and a bit of siracha for heat . Mix that up and pour over. Toss really well and let it rest for about 30 min. For some added protein I made a extra dressing and marinated tofu that I cut into cubes for about an hour then tossed it in a bit of corn starch and fried quickly on medium heat . Ramps or more commonly known as wild leeks is some of the first vegetation you can find in the forest that’s available for harvest after the winter thaw . These strong and stately leaves that stand above the forest floor have such a fantastic combination of garlic and onion flavours.They are also know to be referred to as wild garlic . If you are lucky enough to come across some patches of Ramps take only a few stalks from each patch to allow it to regrow. If you take the entire patch it will not come back the next year . They can be enjoyed in a salad , add them to your soup, or grill them and enjoy on their own . Try out this recipe the next time your wondering what have for breakfast . Cover the base of a small pan with water. Let it come to a slow simmer . Add a handful of spinach. Crack a few eggs on top of the spinach. Sprinkle with nutritional yeast, chili flakes or whatever spice you like. Add a chopped green onion. Sprinkle with a bit of goat cheese . Back by popular demand my stress free Roasted cauliflower salad with a delicious protein. In this case pan fried pickerel! Chicken - steak- tofu all good options . I had some leftover cooked lentils from the other day so added them to the cauliflower and roasted tomatoes just at the end to crisp them up a bit. Dressing is simply Juice of half a lemon, 2 tbsp flax oil, 1 tbsp maple syrup and yes my Favorite - about 1-2 tbsp of Dijon mustard . I add a shallot finely chopped an...d some fresh herbs like mint and fennel which I had. Anything fresh and delicious goes ! A sprinkle of hot chilli flakes for a bit if a kick. Don’t forget to season your cauliflower with whatever spice you like. I’m big into tumeric and cumin tossed in a little avocado oil before you bake it. So satisfying , fast and scrumptious! This wild mess of yumminess is sure to please anyone who, like me, enjoys Thai flavours. A perfect blend of spicy, sweet and crunchy deliciousness! You can make them with some ground chicken or pork or simply leave out the meat . Fry the meat in your Favorite oil- I like coconut oil until golden. Cook your vermicelli noodles and drain them well. Don’t overcook them.best a little undercooked because you will be frying them .Finely chopped some garlic and ginger . I like lot...s as in 3-4 tbsps each LOTS. Fresh is best ! Add this to your meat and stir it up. Add your noodles to the meat mixture and now go for the Thai spices . I love sweet chilli sauce, tamari, sesame oil and some fish sauce . In the meantime Chop up your green onions, cilantro and cabbage. shred some carrots, cucumber - whatever you have . Now wash your lettuce leaves. You should have cup like pieces so romain or Boston or even iceberg are all good. Dry the leaves and load them up with your noodle mixture. Spread the chopped fresh veggies evenly over each loaded leaf. Sprinkle cilantro and fresh lime juice as well as toasted sesame over everything. If you want a little extra heat just squirt some siracha over everything or serve on the side . It’s a messy , delicious,healthy guilt free snack or meal . A Whatever-is-in-the-fridge Vegetable Stew. It’s always nice to clean out your produce drawers and this recipe is flexible enough that you can make ingredient changes based on what you have . For me the key is to start my base with an onion or a leek , garlic, fresh herbs or whatever spices you like - thyme, basil, cumin, coriander . Then toss in your veggies stir them around in the spice for a few minutes and then add your vegetable stock or a can of tomatoes . Simmer and enjoy . #leftovers #veggies #soupseason #easyrecipes
